For several decades, the Mansion Restaurant within the hotel has been celebrated as one of Dallas's premier fine dining destinations, known for its culinary excellence and refined ambiance. The hotel also offers sophisticated options for al fresco dining and in-room dining, providing guests with a versatile range of gastronomic experiences to suit various preferences. This reputation for culinary and service distinction forms the core of all food and beverage operations throughout the hotel, making Rosewood Mansion on Turtle Creek a landmark institution that consistently sets high standards in hospitality and guest satisfaction. This position is a full-time permanent role based in Dallas, Texas, within the Food & Beverage Services department of the hotel. The Food & Beverage Manager will play a pivotal leadership role, reporting directly to the heads of Food & Beverage departments. The manager assumes responsibility for overseeing all aspects of the food and beverage outlets operating at the hotel, ensuring that each element functions smoothly and meets the elevated standards mandated by the hotel's brand and industry benchmarks such as Forbes and LQA. The Food & Beverage Manager will be charged with maintaining and enhancing a culture of exceptional guest service, applying a service and management philosophy that prioritizes the guest experience at every touchpoint. This role includes managing a diverse team of food and beverage professionals, guiding them to consistently deliver precise and seamless service that aligns with the brand’s standards and sequence of service components. The manager must maintain exhaustive knowledge of all day dining standards, detailed food and beverage offerings, menu composition, preparation methods, sourcing of ingredients, garnishes, presentation standards, pricing, and wine and liquor selections. Compliance with state liquor laws is critical, safeguarding the establishment's reputation through responsible service practices. Additionally, the manager will engage in practical administrative duties such as inventory management, requisitioning supplies, maintaining equipment and workplace conditions, reviewing sales and financial performance against budgets, and labor scheduling. The role demands active involvement in labor meetings to analyze metrics and manage costs effectively. The Food & Beverage Manager will also work closely with the outlet teams, conducting training and performance reviews, addressing disciplinary issues, and fostering a positive workplace climate to sustain high levels of team productivity and morale. The manager will also handle guest relations, confidently addressing inquiries and promptly resolving complaints while promoting positive relationships. Coordinating daily operations, including pre-shift meetings and communication from division and hotel management, ensures alignment and readiness for service periods. The role involves strategically planning marketing initiatives, special programming, and holiday offerings in collaboration with corporate and vendor teams. Facilities maintenance responsibilities, adherence to cleanliness and organization standards, and the supervision of closing procedures for staff are also integral to this managerial position. Job Requirements

  • Diploma or some college or equivalent combination of education and work-related experience
  • Must have current and valid Food Handler’s card and certifications required by the State of Texas and/or Dallas County
  • Minimum of 1 year experience in a similar capacity preferred
  • Hotel operational exposure in food and beverage preferred
  • Experience with a luxury or ultra-luxury property or brand preferred
  • Must be able to perform job functions with attention to detail, speed and accuracy
  • Must be able to prioritize, organize and follow-up
  • Must be a clear thinker, remaining calm and resolving problems using good judgment
  • Must follow directions thoroughly
  • Must understand a guest’s service needs
  • Must work cohesively with co-workers as part of a team

Job Duties

  • Maintain complete knowledge of and comply with all departmental policies, service procedures and standards
  • Provide exceptional service and ensure guest satisfaction with dining experiences
  • Manage a team of food and beverage professionals ensuring brand standards and required sequence of service components are executed with precision
  • Maintain complete knowledge of all day dining service standards as well as food and beverage offerings for all outlets
  • Maintain complete knowledge of all menu items, preparation methods, ingredients, sauces, portion sizes, garnishes, presentation, and prices in all outlets
  • Maintain complete knowledge of the characteristics and description of every wine and champagne by the glass and major wines by the bottle on the wine list in the outlets
  • Maintain complete knowledge of all liquor brands, beers, and non-alcoholic selections available in restaurant, bar and In Room Dining
  • Maintain complete knowledge of designated glassware and garnishes for drinks
  • Adhere to Forbes, LQA and Rosewood Brand standards
  • Maintain complete knowledge and strictly abide by state liquor regulations
  • Be familiar with all hotel services, features and local attractions to respond accurately to any guest inquiry
  • Ensure compliance with departmental and hotel standards of cleanliness, organization, and guest service
  • Check storage areas for proper supplies, organization, and cleanliness
  • Instruct designated personnel to rectify any deficiencies
  • Establish par levels for supplies and equipment
  • Complete requisitions to replenish shortages or additional items
  • Monitor and maintain cleanliness and working condition of departmental equipment, supplies, and work areas
  • Review sales from the previous day, resolve discrepancies with accounting and track revenue against budget
  • Prepare weekly work schedules according to labor standards and forecasts
  • Participate in weekly labor meetings and analyze labor
  • Manage and approve void checks per accounting procedures and assist servers with problem payments
  • Run system-closing reports and ensure all server checks are closed before signing out
  • Prepare and submit daily/weekly payroll and tip distribution records
  • Contribute to the outlet's financial success by analyzing profit and loss statements to help drive top-line revenue and control costs
  • Manage guest relations and ensure guest satisfaction
  • Anticipate guests' needs, respond promptly, and promote positive guest relations
  • Monitor and handle guest complaints following set procedures
  • Exhibit a friendly, helpful, and courteous manner when dealing with guests and employees
  • Manage and direct all F&B associates within the department
  • Interview, hire, and onboard all new associates
  • Conduct performance reviews and appraisals
  • Provide performance feedback, handle disciplinary issues, and counsel employees
  • Conduct daily pre-shift meetings with staff
  • Attend division and hotel meetings and relay relevant information
  • Inspect grooming and attire of staff and rectify deficiencies
  • Coordinate proper breaks for staff and ensure adherence to schedules
  • Conduct formal training programs for new hires and ongoing training for existing staff
  • Monitor staff performance and rectify deficiencies
  • Assign work and side duties and communicate changes
  • Check pick-up and side stations for cleanliness and stock
  • Inspect table setups for cleanliness and order
  • Anticipate heavy business times and organize procedures
  • Foster a cooperative working climate
  • Create and maintain positive collaboration between outlets, vendors, and corporate teams
  • Contribute to the outlets' marketing and programming
  • Complete maintenance work orders and submit to Engineering
  • Inspect and ensure all materials and equipment are ready for service
  • Lead planning and execution of projects
  • Ensure all closing duties for staff are completed
  • Document pertinent information in the department logbook
  • Complete all paperwork and closing duties
  • Check with Front Desk for updates on house count and arrivals
  • Assist associates and other managers with job functions
  • Perform all other duties as required
