Job Requirements
- high school diploma, GED certification or equivalent
- two years food preparation experience in restaurant or food service
- one year supervisory experience
- successful background investigation
- completion of New Mexico Food Handlers course within 30 days of hire
- ability to lift 50 pounds
- willingness to work flexible schedules including weekends and holidays
- ability to work indoors and outdoors under various weather conditions
- ability to stand and walk for extended periods
- punctual and regular attendance
- comply with all safety and sanitation protocols
Job Qualifications
- high school diploma, GED certification or equivalent
- minimum two years of food preparation experience in a restaurant or food service including at least one year of supervisory experience
- knowledge of culinary techniques and food preparation methods
- skills in developing banquet menus and accommodating dietary preferences
- ability to lead and motivate a team
- strong organizational skills
- strong verbal and written communication skills
- ability to supervise kitchen staff
- personnel management skills
- flexibility to adapt to fast-paced, dynamic environments
- ability to write and prepare standard reports
- knowledge of buffet line operations
- understanding of food preservation temperature requirements
- familiarity with casino purchasing regulations desirable
- knowledge of tribal, federal, state, and local sanitary regulations regarding food preparation and storage
Job Duties
- assist the Executive Sous Chef/Banquet Chef with training line cooks
- prepare weekly work schedules and daily break schedules for pantry staff
- ensure kitchen recipes are followed and maintain storeroom requisitions to sustain par levels
- assure all kitchen staff work in sanitary, safe, and productive manner
- oversee food preparation for quality, taste, and presentation
- cooperate with service employees to provide the best guest service
- maintain all kitchen workstations and storage areas clean and orderly
- assign daily cleaning tasks
- advise on equipment repairs and ensure timely follow-ups
- ensure proper temperature requirements and complete logs
- maintain high personal sanitation standards among personnel
- investigate and resolve guest complaints about food quality and service
- responsible for opening and closing kitchen
- ensure safety gloves are worn when appropriate
- prevent overproduction to minimize waste
- perform additional assigned duties
- punctual and regular attendance according to schedule
