Job Requirements

  • High school diploma or GED certification
  • two years food preparation experience in a restaurant or food service capacity
  • one year supervisory experience
  • successful completion of New Mexico Food Handlers course within 30 days of hire
  • ability to pass stringent background investigation
  • ability to lift 50 pounds
  • flexibility to work weekends, holidays, and overtime
  • ability to work in indoor and outdoor conditions
  • compliance with attendance policy
  • excellent attendance and punctuality
  • physical ability to bend, crouch, reach, lift, push, pull, and stand for extended periods
  • willingness to submit to pre-employment drug and alcohol screening
  • willingness to submit to criminal background screening

Job Qualifications

  • knowledge of culinary techniques and food preparation methods
  • skills in developing banquet menus

  • knowledge of buffet line operations
  • understanding of minimum food safety temperature requirements
  • knowledge of tribal, federal, state, and local sanitary regulations
  • knowledge of casino purchasing regulations considered a plus

Job Duties

  • Assist the Executive Sous Chef/Banquet Chef with training line cooks
  • prepare weekly work schedules and daily break schedules for pantry staff
  • manage daily food production schedule conforming to cover forecast
  • ensure kitchen recipes and plating instructions are followed
  • prepare storeroom requisitions to maintain par levels
  • assure kitchen staff works in a sanitary, safe, and productive manner
  • oversee food preparation processes for consistency, quality, and adherence to standards
  • ensure all food on the service line is excellent in preparation, taste, and presentation
  • promote cooperation between kitchen and restaurant service employees
  • keep kitchen workstations and storage areas clean and orderly
  • assign daily cleaning tasks
  • advise management on equipment repairs and follow up
  • maintain temperature logs and ensure proper temperature requirements
  • enforce personnel sanitation standards
  • investigate and resolve customer complaints about food quality and service
  • open and close the kitchen as necessary
  • ensure safety and food preparation gloves are worn where appropriate
  • control food production levels to prevent waste
  • perform additional duties as assigned
  • maintain punctual and regular attendance
