The Fine Dining Cook I position at the High Limits Lounge is a vital role that contributes to delivering a sophisticated culinary experience tailored to discerning guests. This full-time role offers a starting rate of $19.26 per hour and is perfect for individuals passionate about culinary arts and eager to work in a dynamic, fast-paced environment. The Fine Dining Cook I is responsible for preparing and executing sophisticated dishes with an emphasis on refined presentation, flavor balance, and consistency. This role requires a strong foundation in culinary techniques as well as exceptional teamwork skills, as the cook collaborates closely with the Specialty Sous Chef, Restaurant Chef, and the broader culinary team to ensure all meals meet high standards of quality and timely service.
As a Fine Dining Cook I, you'll prepare meals according to assigned stations such as Salad/Pantry, Appetizer, or Add-On stations within an ala carte set-up, managing ticket flow and continuity of service to maintain smooth operation. You'll use various cooking methods including sautéing, baking, boiling, blanching, braising, frying, searing, and steaming to create memorable dishes, including soups, salads, sauces, and dressings, ensuring each plate is artistically presented according to specifications. Your role will also involve monitoring food supplies and requisitioning necessary items through coordination with the Specialty Sous Chef. Maintaining cleanliness and sanitation throughout your work area during shifts, promptly informing supervisors of any irregularities, and providing excellent service support to both dining room staff and guests are crucial elements of this position.

Job Requirements
- High school diploma, GED, or equivalent
- One year of food production/preparation experience in a similar high-volume restaurant setting
- Experience with ala carte service preferred
- Ability to work in a fast-paced kitchen environment
- Strong culinary skills and knowledge of various cooking techniques
- Ability to maintain cleanliness and sanitation standards during shifts
- Good communication and teamwork skills
Job Qualifications
- High school diploma, GED, or equivalent
- One year of food production/preparation experience in a similar high-volume restaurant setting
- Ala carte experience preferred
- Food production/preparation experience in a three-diamond rated property or above (AAA Diamond Rating) preferred
Job Duties
- Prepare meals and other food items according to assignment by the Specialty Sous Chef or Restaurant Chef at assigned Salad/Pantry, Appetizer, or Add-On fine dining stations in accordance with fine dining standards and guest requests
- Work in an ala carte setting with the ability to monitor and control ticket flow and continuity of service
- Monitor customer flow and estimate daily food requirements and supplies, and requisition items needed on a daily basis through the Specialty Sous Chef
- Use recipes and a variety of kitchen equipment to sauté, bake, boil, blanch, braise, fry, sear, and steam food to prepare and reheat soups, salads, sauces, dressings, and other food items
- Plate meals or other food items in accordance with plate presentation specifications
- Inform supervisor of any irregularities occurring within the food preparation operation
- Provide excellent and cooperative service to dining room staff and guests
- Maintain clean and sanitary work areas throughout the meal period or working shift
