The Field Sous Chef position at Upper Crust Food Service is a dynamic and pivotal role designed to provide versatile culinary coverage across multiple fraternity and sorority houses within a qualifying campus. Unlike traditional chef roles assigned to a single location, this role requires agility and adaptability, as the Field Sous Chef rotates among different houses, stepping in to cover chef absences, support busy meal services, assist with special events, and collaborate with senior chefs on skill development and leadership growth. The Field Sous Chef plays an important role not only in daily food preparation and service but also in operational management. Job Requirements
- Culinary degree or equivalent professional kitchen experience
- Minimum of three years professional kitchen experience with at least one year as a sous chef or equivalent
- Ability to execute menus designed by other chefs to exact standards
- Knowledge of food safety with current ServSafe certification or ability to obtain within 60 days
- Flexibility to work across multiple kitchens including early mornings, evenings, and weekends
- Strong interpersonal and team integration skills
- Capability to work in loud, busy kitchen environments involving heat, sharp tools, and hazards
- Physical ability to stand for long periods and lift up to 50 pounds
- Willingness to adapt to variable work locations and schedules
Job Qualifications
- Culinary degree or equivalent professional kitchen experience
- Three or more years in a professional kitchen with at least one year at the sous chef level or equivalent
- Demonstrated ability to execute menus designed by other chefs to their standards
- Strong food safety knowledge with ServSafe certification or ability to obtain within 60 days
- Flexibility and mobility to work across multiple kitchens on short notice including early mornings, evenings, and weekends
- Strong interpersonal skills with ability to integrate quickly into established kitchen teams
- Prior experience in high-volume residential, hospitality, or institutional food service preferred
- Experience with menu design, recipe costing, and inventory management preferred
- Exposure to dietary accommodation programs for allergens and lifestyle diets preferred
Job Duties
- Receive daily assignments and lead service at assigned houses
- Execute the house's planned menu to the expected standard during chef absences
- Manage back-of-house operations including prep coordination, station setup, food safety compliance, and service execution
- Partner with front-of-house teams and house leadership on logistics, dietary accommodations, and guest needs
- Rotate across all houses on campus building relationships and learning kitchen specifics
- Document insights and best practices to inform campus-wide standards
- Provide prep assistance and support new house onboarding during light coverage days
- Execute special events such as philanthropies, recruitment, and formal dinners
- Participate in development reviews and build a portfolio of menu concepts and service plans
