Job Description

The Peabody Hotel is a renowned luxury hotel known for its exceptional service and iconic presence in the hospitality industry. The role of the Department Manager Assistant within the Food and Beverage division is a critical position responsible for supporting all aspects of the hotel’s food and beverage outlets. Reporting to the Assistant Director of Food and Beverage and the Director of Food and Beverage Operations, the individual in this role supervises a variety of front-of-house and back-of-house personnel including servers, hostesses, server assistants, cashiers, food runners, and culinary associates. The position ensures that all outlets operate consistently within the hotel’s rigorous standards for service, cleanliness, safety, and guest relations.

This dynamic role requires the ability to act as the Department Manager in their absence, taking charge of daily operations across multiple venues within varying environments such as restaurants, bars, guestrooms, kitchens, and stewarding areas. The successful candidate will have comprehensive knowledge of food and beverage service styles, including French, Russian, and Butler service, as well as expertise in proper wine and alcohol service in compliance with state liquor laws. Responsibilities include maintaining high standards in maintaining cleanliness, guest satisfaction, employee performance, handling guest complaints professionally, and managing inventory and supply levels effectively.

In addition, the role demands strong leadership skills to conduct pre-shift meetings, assign duties, monitor staff performance, and ensure professional grooming and adherence to the hotel’s service philosophy. The candidate will be expected to handle administrative duties such as managing reservations, processing payments through the POS system, and preparing accurate reports while maintaining confidentiality and data security.

This position involves working under various conditions including exposure to temperature changes, noise, chemicals, and the necessity for physical endurance such as standing and walking for long periods, lifting up to 50 pounds, and performing manual tasks. To succeed, the candidate must demonstrate excellent communication abilities, sound judgment, problem-solving skills, and the capacity to work independently or as part of a team.

Job Requirements

  • High school diploma or equivalent
  • Minimum age of 18 to serve alcohol
  • 1-2 years relevant experience
  • Knowledge of food service styles
  • Fluency in English
  • Basic computer skills
  • Ability to perform physical tasks such as standing for long periods and lifting up to 50 pounds
  • Certification in food safety and alcohol awareness
  • Ability to work in fast-paced, high volume environments
  • Strong leadership and communication skills

Job Qualifications

  • High school graduate or equivalent vocational training certificate, some college
  • Minimum 18 years of age to serve alcoholic beverages
  • 1-2 years experience in restaurant, preferably as lead server in high volume upscale setting
  • Knowledge of food service styles such as French, Russian, Butler
  • Proper wine service
  • Fluency in English verbal and written
  • Basic arithmetic and computer skills including Word, Excel and Email
  • Basic familiarity with food and beverage cost controls
  • Ability to perform job functions with attention to detail and accuracy
  • Ability to prioritize, organize, and resolve problems calmly
  • Ability to communicate legibly and courteously
  • Maintain confidentiality and work without supervision
  • Certified in Manager ServSafe food handling
  • Certified in TIPS alcohol awareness within 60 days of employment
  • Certified in TRAC training and compliance

Job Duties

  • Maintain knowledge of and comply with hotel and departmental policies, service procedures and standards
