The role of Food and Beverage Front-of-House Supervisor is a critical leadership position responsible for overseeing the day-to-day operations of all front-of-house food and beverage outlets that do not involve catering services. This role demands a proactive, hands-on manager who ensures that service standards are maintained at a high level and that guests receive prompt, courteous service. The supervisor leads multiple teams including maitre d's, staff in restaurants such as Silks and Racing, concessions, and players' club front-of-house personnel. This includes delegating responsibilities, training and developing employees, managing staffing levels, and addressing guest concerns with professionalism and discretion.

In addition to team supervision, the Food and Beverage Front-of-House Supervisor is accountable for controlling operational costs related to food, beverages, and labor while aligning expenses with budgetary guidelines. They regularly review operational procedures and personnel performance to identify areas of improvement and implement best practices. Responsibilities include leading management and pre-shift meetings to ensure seamless communication and operational alignment among front-of-house teams.

This position also requires expertise in managing technology systems integral to food and beverage operations, including Point-of-Sale (POS) systems. The supervisor is tasked with troubleshooting technical issues, training staff on proper POS usage, reducing transaction errors, and ensuring efficient order processing. They oversee inventory management processes, including stock counts and ordering of supplies and alcohol, ensuring compliance with relevant safety and security regulations. The role demands strong financial management skills, encompassing financial reporting, analysis of profitability, and making necessary adjustments to meet financial goals.

Beyond operational duties, the supervisor plays a significant role in staff performance management by conducting regular reviews, providing coaching, and fostering a positive work environment that enhances employee retention and engagement. They develop, enforce, and update operational policies and training programs to maintain compliance with health and safety rules and to drive continuous service excellence. The supervisor actively addresses customer feedback and complaints to ensure an exceptional guest experience at all touchpoints.

Working in a casino-related environment, this role requires flexibility including working irregular schedules, weekends, evenings, holidays, and the ability to operate effectively in a smoke-filled environment. The supervisor must also meet specific requirements, including certification such as ServSafe Food Handler and state-specific licenses like the Oklahoma ABLE license. Physical demands are moderate to heavy with tasks requiring bending, lifting, walking, and standing for extended periods while maintaining a high level of professionalism and attentiveness.

Job Requirements

  • Bachelor's degree or relevant experience in lieu of education
  • Minimum 3 years supervisory experience in food and beverage
  • Knowledge of regulatory compliance in food and beverage operations
  • Experience managing inventory control and supplier relations
  • Ability to operate and troubleshoot POS systems
  • ServSafe Food Handler Certification or ability to obtain within first month
  • Oklahoma ABLE license or ability to obtain upon hire
  • Ability to pass background check and licensing requirements
  • Ability to complete pre-employment drug test with negative result
  • Strong communication and leadership skills
  • Ability to work flexible and irregular hours including evenings, weekends, and holidays
  • Must be able to work in a smoke-filled casino environment
  • Ability to lift up to or over 30 lbs

  • Willingness to assist in all areas of restaurant operations as needed

Job Qualifications

  • Bachelor's degree in Food Service Management, Hospitality Management, or related field
  • 3+ years of leadership or supervisory experience in food and beverage operations
  • Knowledge of food service and beverage regulatory compliance requirements
  • Experience in inventory control and supplier management
  • Familiarity with purchasing, pricing, and cost control systems
  • Strong computer skills including Microsoft Office, Time Keeping, and HRIS systems
  • Expertise in operating and training staff on POS systems
  • Financial acumen for budget and expense management
  • Strong organizational, prioritization, and conflict resolution skills
  • Ability to develop strategies for enhancing guest experience
  • Proficient in operational software including inventory management and scheduling
  • Ability to work flexible schedules including weekends and holidays

Job Duties

  • Identify and delegate responsibilities to shift leaders and staff to ensure objectives are met and excellent service is consistently achieved
  • Monitor and control operational costs including food, beverage, and labor expenses
  • Review operations and staff to identify problems, concerns, and opportunities for improvement
  • Lead weekly management meetings and daily pre-shift meetings for clear communication
  • Make hiring and firing decisions in collaboration with management
  • Manage all outlets to meet or exceed standards in food quality, safety, and cleanliness
  • Oversee and manage Point-of-Sale (POS) system implementation, training, and troubleshooting
  • Conduct regular performance reviews and provide coaching and feedback
  • Develop and enforce operational policies, procedures, and training programs
  • Ensure adherence to all applicable regulations including health codes and liquor licensing
  • Address customer concerns and feedback promptly and professionally
  • Maintain teamwork with food and beverage management and other departments
  • Follow and enforce company policies including cash handling and safety/security measures
  • Assist in various restaurant functions when staffing constraints arise
  • Ensure cleanliness and hygiene standards are consistently met
  • Prepare financial reports, track revenue, and analyze profitability
  • Maintain and update inventory counts and manage supply ordering and storage
  • Ensure all certification and licensing requirements are current
  • Determine work procedures, prepare schedules, and expedite workflow
  • Perform other duties as assigned
