The Senior Level Chef role at Arizona Biltmore is a critical leadership position that requires versatile support across multiple food and beverage outlets and banquets. This position demands culinary expertise coupled with strong leadership to uphold the highest standards of food quality, consistency, and guest satisfaction. The Senior Chef collaborates closely with Chefs de Cuisine and senior management to maintain excellence during busy periods, cover days off, and support special projects like menu development and corporate training. Flexibility is essential as the Chef adapts to evolving hotel needs and contributes actively to ongoing team development.
Key responsibilities include supervising daily food preparation and production, ensuring compliance with food safety and quality guidelines, managing inventory and ordering efficiently, and providing mentorship to junior culinary staff. The Chef also participates in administrative duties such as managing food and labor costs and ensuring all operations adhere to local and company health and safety regulations. Strong communication skills enable proactive coordination with other hotel departments to deliver seamless event execution and guest experiences. Occasionally, this role involves direct guest interaction during events to ensure satisfaction and accommodate special needs.

Job Requirements
- High school diploma or GED
- Accredited culinary school or apprenticeship preferred
- Minimum five years experience in hotel kitchens with high volume and quality
- Minimum five years supervisory experience leading five or more staff
- Valid Maricopa County Food Handler Card
- ServSafe certification preferred

Job Duties
- Assist and oversee all restaurant outlets and banquets as needed, upholding the unique standards set by each CDC and providing coverage on days off
- Maintain a very flexible schedule to adapt to fluctuating operational demands, ensuring consistency and continuity in all culinary areas
- Supervise daily prep and production in each outlet, checking standards and promptly communicating any discrepancies to the outlet chef and senior leadership
- Collaborate with CDCs on special events, menu development, and corporate trainings, contributing to seamless event execution and innovation
- Offer hands-on support in areas requiring additional guidance, helping train and develop CDCs, Sous Chefs and Junior Sous Chefs to strengthen the culinary team
- Attend daily REO and BEO meetings to stay informed of hotel-wide activities and adjust culinary operations accordingly
- Oversee inventory management and ordering, streamlining processes to minimize waste and maintain optimal stock levels across all outlets and banquets
