Currently, Pyramid Global Hospitality is seeking an Executive Sous Chef for the La Quinta Resort and Club. This leadership position calls for a culinary professional with significant experience in high-volume kitchens, a college education in the culinary arts, and a passion for creativity. The Executive Sous Chef will oversee daily food production and presentation, ensuring safety, sanitation, and compliance with quality standards for a profitable operation. Job Duties
- Attract, retain, and motivate the best culinary talent
- act in the absence of the executive chef to complete daily ordering using current par levels for all outlets, employee cafeteria, and banquets
- perform any function within the culinary department such as cook or steward when needed
- conduct daily walk-throughs of the kitchen and make recommendations for corrections, repairs, cleanliness concerns, and improvements
- hold daily meetings with the culinary team to ensure preparation and communication of all pertinent information
- attend weekly food and beverage, BEO, leadership, and monthly safety meetings representing the culinary team
- lead by example as the role model for the culinary team
- manage finances, analyze and control costs, and manage the budget to ensure profitability
- have thorough knowledge of food allergens and handle guests with allergies with urgency
- ensure prep sheets are updated and properly used daily
- guide nightly cleaning of kitchen areas and follow up with stewarding crew for dish area cleanliness
- assist the Executive Chef in creation, costing, and implementation of seasonal and special menus
