Job Requirements

  • Ability to work from standing position for extended periods
  • Ability to perform reaching, stooping, and crouching motions repeatedly
  • Dexterity to manipulate kitchen tools and utensils
  • Good visual abilities for quality control and safety
  • Sense of smell and taste for quality food preparation
  • Wears closed toe, non-canvas, non-skid shoes
  • High school diploma or equivalent
  • Previous experience in similar culinary leadership roles

Job Qualifications

  • Proven record of culinary accomplishments
  • Basic reading, writing, mathematical, and computer skills
  • At least five years of high-volume cooking experience in fine dining
  • Minimum three years as an Executive Chef in a hotel or fine dining restaurant
  • Strong interpersonal, verbal, and written communication skills
  • Leadership, training, and motivational abilities
  • Even-tempered with consistency and fairness
  • Organized and deadline-oriented
  • Good judgment of people and situations
  • Ability to handle high volume of events
  • Neat, well-groomed, and highly professional

Job Duties

  • Review and approve recipe files and follow up with culinary staff to improve cuisine
  • Use high-quality food items creatively and cost-effectively
  • Review and approve food orders for special items
  • Frequently review finished products for quality before leaving the kitchen
  • Oversee kitchen appearance, cleanliness, and safety
  • Maintain kitchen equipment according to health and company standards
  • Troubleshoot unexpected kitchen situations
  • Ensure proper disposal of kitchen waste
  • Oversee menu creation, production, and ordering for special events
  • Price menu, catering, and seasonal items while adhering to cost control guidelines
  • Develop and approve seasonal specials and pastry items
  • Conduct product taste panels with Food and Beverage management
  • Participate in culinary events and competitions
  • Control food costs and discuss daily reports with key staff
  • Ensure invoices are coded and prices updated weekly
  • Manage kitchen payroll and staffing schedules
  • Interview, hire, train, and motivate culinary staff
  • Provide leadership by fostering a positive work environment and counseling employees
  • Delegate responsibilities to develop team members
  • Cooperate with management team and complete assigned projects
  • Maintain grooming standards and wear provided uniform
