Job Requirements

  • Ability to work from a standing position for extended periods
  • Capability to perform reaching, stooping, and crouching motions repeatedly
  • Dexterity for handling food preparation tools and utensils
  • Visual acuity including closeness and depth perception for quality control and safety
  • Possession of sense of smell and taste for quality food preparation
  • Must wear closed toe, non-canvas, and non-skid shoes
  • At least 5 years high-volume cooking experience
  • At least 3 years experience as an Executive Chef
  • Basic reading, writing, mathematical, and computer skills
  • Ability to lead and motivate culinary staff
  • Strong organizational skills
  • Excellent communication skills

  • Minimum 5 years high-volume cooking experience in fine dining
  • Minimum 3 years experience as an Executive Chef in a hotel or fine dining restaurant

  • Demonstrated leadership, training, and motivational abilities
  • Even-tempered with a reputation for consistency and fairness
  • Highly organized and able to meet deadlines
  • Good judgment of people and situations
  • Ability to handle detailed and high-volume events
  • Neat, well-groomed, and highly professional appearance
  • Exceptional guest and customer service skills

Job Duties

  • Review and approve recipe files and collaborate with culinary staff to improve cuisine quality
  • Use high-quality food items creatively while ensuring cost-effectiveness
  • Review and approve food orders from central commissary for special items
  • Monitor finished products for quality before leaving the kitchen
  • Oversee kitchen cleanliness, safety, and equipment maintenance according to health standards
  • Troubleshoot unexpected kitchen situations and manage kitchen waste disposal
  • Create menus, manage production, and order supplies for special events
  • Price menu and catering items adhering to food and cost control guidelines
  • Develop and approve seasonal specials and new menu items
  • Schedule and conduct product taste panels with Food and Beverage Management
  • Participate in culinary events and competitions
  • Manage food costs to meet weekly budgetary goals and implement waste control procedures
  • Discuss daily food cost reports with key kitchen and F&B staff
  • Ensure invoice coding and price updates weekly
  • Maintain and monitor kitchen payroll with respect to business forecasts and budget
  • Interview, hire, train, develop, and motivate kitchen staff
  • Review and adjust staff schedules to meet forecasts and budget
  • Provide positive leadership, counsel employees, delegate responsibilities, and exhibit professional management
  • Uphold company grooming standards and uniform policies at all times
  • Cooperate with management team and complete assigned projects in a timely manner
