Job Requirements
- Minimum high school diploma
- Previous experience in dietary department of a health care facility preferred
- Hold relevant license or certification such as dietician, ADA, diet technician, chef, or dietary manager as per state regulations
- Ability to read, write, and use mathematics and units of measurement
- Knowledge of menus, recipes, food purchasing, preparation and storage
- Ability to supervise and train food service employees
- Knowledge of community policies, procedures and job descriptions
- Ability to comply with ADA, state, infection control, health department and OSHA regulations
- Willingness to participate in continuing education as mandated by state law
Job Qualifications
- Demonstration of core values including love, kindness, honesty, goodness, fairness, and respect
- Hold relevant license or certification such as dietician, ADA, diet technician, chef, or dietary manager meeting state regulatory requirements
- Completion of a course in food service supervision meeting American Dietetic Association standards or equivalent education with on-the-job dietician counseling
- Compliance with continuing education as required by state law

Job Duties
- Assist in development of dietetic policies and procedures
- Supervise the receiving and storage of food
- Supervise food preparation and service
- Scheduling of food service team members
- Assist the dietician in planning and conducting an on-going in-service training program and provide follow up recommendations
- Visit residents and assist in gathering information on food preferences
- Maintain records such as meal census, diets served, menus, purchase records, nutrition assessments and care plans, and weekly staffing patterns
- Hire, train, evaluate, and supervise food service department employees within a specific budget
- Plan menus in consultation with dining services consultants to ensure nutritional standards and regulatory compliance
- Review resident diet information and coordinate with residents, family and healthcare staff to adjust diets as needed
- Supervise cleaning procedures to maintain safe and sanitary conditions
- Establish practices of serving hot food hot and cold food cold
- Monitor food production and preparation to avoid waste and ensure quality
- Instruct new residents on meal service times and nourishment options
- Consult with Wellness Director, Executive Director, and consulting Dietician on special diet requirements
- Participate in Quality Assurance Committee including infection control and safety
- Review health certificates and food handlers permits
- Conduct monthly temperature studies
- Conduct food waste studies twice a week
- Keep comprehensive records including menus, substitutions, special diet roster, meals served, and food cost records
