Job Requirements

  • Relevant culinary education or certifications
  • proven experience in food and beverage management
  • strong leadership and team management skills
  • excellent communication and interpersonal skills
  • ability to manage budgets and financial reports
  • knowledge of health and safety regulations including OSHA and Department of Health
  • ability to work flexible hours including nights and weekends

Job Qualifications

  • Food and Beverage/Culinary experience in related fields
  • experience in high volume and fine dining environments with P&L responsibilities
  • strong leadership skills
  • effective communication skills
  • sound judgment in decision making
  • comprehensive food knowledge including profit and loss statements, cost control, menu planning, budgeting, training, inventory control and sanitation
  • ability to work in various kitchen environments including butchering, baking, soups, stocks, sauces, roasting, sautéing, boiling and cold food
  • experience supporting and enforcing initiatives from Food & Beverage Director

Job Duties

  • Create and manage annual budgets
  • lead forecasting and cost control initiatives
  • oversee requisitioning, production, fabrication, and quality control
  • ensure compliance with Station Casinos specifications and guidelines
  • maintain kitchen equipment and cleanliness standards
  • enforce adherence to Department of Health and OSHA regulations
  • collaborate with management to ensure product compliance and cost control
