Job Qualifications

  • comprehensive food knowledge including profit and loss statements, cost control, menu planning, budgeting, training, inventory control, and sanitation
  • ability to work in various kitchen environments including butchering, baking, sauces, roasting, sautéing, boiling, and cold food preparation
  • experience supporting food and beverage leadership

Job Duties

  • Create and manage annual budgets for the culinary unit
  • lead forecasting efforts and implement cost controls to achieve financial goals
  • oversee departments to ensure requisitioning, production, fabrication, and quality standards are met
  • maintain kitchens and equipment in compliance with health and safety regulations
  • collaborate with management team to ensure products meet specifications and cost controls
  • enforce initiatives from the Food and Beverage Director
  • ensure a clean and hazard-free work area following Department of Health and OSHA guidelines
