The Executive Chef role at Legends Global is a leadership position responsible for directing, planning, and managing every aspect of culinary operations across multiple sites within the Florida region. Reporting directly to the General Manager, the Executive Chef plays a critical role in ensuring the highest standards of food preparation, production, and sanitation while fostering collaboration among culinary leaders to maintain brand consistency and elevate menu offerings. This position demands a hands-on leader who can provide operational support during openings, special events, and staffing challenges, ensuring smooth functioning of the kitchen and effective teamwork. The Executive Chef will manage culinary staff by overseeing hiring, scheduling, training, and mentoring, maintaining budgetary control, and performing quality assurance to guarantee excellent food quality and customer satisfaction.
This role also includes regular travel between business units to support various operational needs, making adaptability and strong communication essential traits. - ability to perform duties in confined spaces and within extreme temperature ranges

Job Duties
- manage and oversee all production, operation, and sanitation aspects of culinary and stewarding operations throughout the property
- oversee all culinary employees to achieve budgetary, food quality, and customer service expectations
- create and develop recipes, dishes, and other property-specific culinary requirements
- manage hiring, scheduling, training, mentoring, and disciplinary action for all employees
- make effective use of available resources including time, labor, and materials to maximize productivity
- assist in ensuring schedules are complete based on a forecast
- perform regular quality assurance and quality control inspections to maintain cleanliness and equipment functionality
- maintain food, labor, and other expenses at budgeted levels
- communicate and work closely with General Manager and Regional Executive Chef
- maintain a consistent high level of food quality, kitchen productivity, and supply chain management
- ensure team members clean their areas and assist with other cleaning tasks
- cross-train department staff while encouraging and supporting peers and team
- demonstrate competent product knowledge by proper storage and handling of perishable items
- travel regularly to support other business units as needed
