The Executive Chef role at Legends Global is a critical leadership position based onsite at the Alamo Dome in San Antonio, TX. This role is charged with the complete oversight and execution of the culinary operations within the facility. Responsibilities include the design and management of the menu offerings, ensuring that all food service activities run seamlessly on a daily basis. The Executive Chef is expected to be an integral part of the venue’s operational team, taking the lead in food service to deliver exceptional culinary experiences. The role demands a blend of creativity, meticulous organizational skills, and sharp business acumen to maintain budgetary goals and quality standards. The successful candidate will be directly responsible for ordering, receiving, and preparing all food items while maintaining stringent control over food costs and ensuring compliance with hygiene and safety standards. Beyond daily operations, this position requires developing and costing menus for banquets and concessions, creating client proposals, and conducting tastings to secure event bookings. An essential component of the role involves active participation in the wider local hospitality community and professional organizations, further enhancing the venue’s reputation and network. Supervisory responsibilities are extensive, encompassing hiring, training, and managing all kitchen and stewarding staff, ensuring adherence to health department regulations and the Serve Safe certification standards. This senior-level role also includes oversight of retail production and delivery and the support and development of area-wide sustainability programs. Job Requirements

Job Duties
- Ordering, receiving, and preparing all food items
- Maintaining food costs and budget goals
- Producing required product according to Banquet Event Orders for each event
- Developing proposals for potential clients including tastings on larger plated events
- Entertaining prospective clients through Chef’s tastings
- Reporting daily event costs to the General Manager
- Maintaining an active role in local hospitality community and professional associations
- Attending event-related meetings and coordinating with other departments
- Developing and costing menus for banquets and concessions
- Maintaining kitchen equipment cleanliness and annual maintenance
- Participating in promotional media events
- Hiring and training kitchen and stewarding staff including Serve Safe and Health department regulations
- Managing culinary and stewarding personnel to meet labor and production objectives
- Overseeing retail production and delivery
- Maintaining Health Department scores of 90 or higher
- Communicating regularly with the General Manager and other Legends Alamodome employees
- Supporting and developing area-wide sustainability programs, training initiatives, and culinary standards
- Collaborating with the General Manager to maintain OGSM policies and goals
- Ensuring a high level of field support
