The Executive Chef position at Chartwells Higher Education is a pivotal role that combines culinary expertise with leadership in managing kitchen operations. In this role, the Executive Chef is responsible for planning menus—both regular and modified—that adhere to established guidelines. They will direct food preparation, maintain strict compliance with safety and sanitation protocols, and lead a team focused on delivering exceptional meals in high-volume and complex foodservice settings. The Executive Chef also manages inventory control, waste management, and cost-effective utilization of leftover foods within company parameters. The Executive Chef plays a key role in staff development by training kitchen personnel on food preparation techniques, safe equipment handling, sanitation standards, and overall operational efficiency. Maintaining a clean, safe, and sanitary kitchen environment is of utmost importance, as is ensuring compliance with federal, state, and local health regulations through consistent monitoring and audits. Candidates suitable for this role will typically have an Associate of Science degree or equivalent experience, complemented by three to five years of progressive culinary and kitchen management experience. Job Duties
- Plan regular and modified menus according to established guidelines
- follow standardized recipes, portioning and presentation standards
- complete and utilize daily production worksheets and waste log sheets
- taste completed meals to ensure quality
- train kitchen staff in food preparation, safe handling, operation of equipment, food safety and sanitation based on company and regulatory standards
- establish and maintain cleaning and maintenance schedules for equipment, storage and work areas
- ensure that kitchen staff follows and completes schedules as assigned
- maintain inventory of food and non-food supplies to stay within established guidelines while assuring that necessary product is available when needed
- make all decisions regarding utilization of leftover food products staying within company guidelines
- comply with federal, state and local health and sanitation regulations and department sanitation procedures as evidenced through local health department and third-party audits
- follow facility, department, and company safety policies and procedures to include occurrence reporting
- participate and attend departmental meetings, staff development, and professional programs as appropriate
