Job Qualifications

  • high school diploma or equivalent
  • minimum 5 years of progressive culinary or kitchen management experience
  • experience in high volume complex foodservice operations preferred
  • extensive catering experience a plus
  • hands-on chef experience required
  • comprehensive knowledge of food and catering trends
  • proficiency with Microsoft Office Word Excel PowerPoint Outlook and internet
  • servsafe certification highly desirable
  • strong leadership and team management skills
  • excellent communication and customer service abilities
  • ability to manage budgets and control costs
  • experience with safety and sanitation compliance
  • ability to motivate and empower team members

Job Duties

  • lead daily culinary production including meal preparation food quality presentation compliance with safety and sanitation standards team member productivity performance cost controls and profitability
  • determine food presentation and create decorative displays
  • provide direction on menu development incorporating seasonal or special ingredients
  • source fresh food and monitor produce and meat freshness
  • maintain product consistency through inspections of seasoning portion and appearance
  • research customer preferences and develop menus with local foods and flavors
  • prepare and cook various foods regularly or for special events
  • demonstrate new cooking techniques and equipment to staff
  • supervise and coordinate activities of cooks and food preparation workers
  • ensure compliance with health safety and sanitation regulations
  • provide guidance and set performance standards for subordinates
  • communicate safety procedures and monitor adherence
  • monitor quality of raw and cooked foods
  • enforce food safety and sanitation guidelines
  • maintain purchasing receiving and food storage standards
  • participate in business strategy development aligned with client mission and vision
  • manage controllable expenses including food cost supplies uniforms and equipment
  • implement purchasing and receiving control procedures
  • analyze financial and operational data to adjust plans labor needs and costs
  • develop and manage department budget to meet or exceed objectives
  • identify revenue and expense opportunities and challenges
  • control food labor and other expenses monitoring budgets
  • oversee food inventory purchasing control and disbursement
  • schedule staff based on forecasted volumes
  • create 100 percent resident satisfaction by training team and providing resources
  • maintain professional attitude and appearance with residents and staff
  • improve service through communication guidance coaching and feedback
  • support service behaviors that exceed customer satisfaction and retention
