We are currently seeking an Executive Chef for our high-volume culinary operations near Portland International Airport. This pivotal role demands a seasoned leader passionate about managing large-scale culinary teams and excelling in fast-paced, production-driven environments. The Executive Chef will oversee food production that serves thousands of travelers every day, requiring a precise focus on consistency, process optimization, food safety, and team development. This position offers a unique opportunity to lead a substantial team of approximately 300 employees servicing over 12 airlines, driving operational efficiency while championing culinary innovation and quality control. The Executive Chef will leverage strong leadership and financial skills to manage budgets, inventory, and standards, ensuring every meal meets rigorous expectations and safety protocols.

Job Requirements

  • high school diploma or equivalent
  • five to seven years commercial cooking experience with at least two years managerial experience
  • culinary school certification or apprenticeship preferred
  • knowledge of HACCP and food safety regulations
  • ability to lead and manage large culinary teams
  • strong organizational and financial management skills
  • excellent communication and interpersonal skills

Job Qualifications

  • five to seven years commercial cooking experience with at least two years in management
  • culinary school certification or apprenticeship preferred
  • additional certifications such as diet chef or industrial chef are a plus
  • knowledge of food and hygiene regulations including HACCP
  • strong financial acumen
  • leadership and team development skills

Job Duties

  • manage food production and control budgets ensuring operational efficiency
  • maintain recipe standards and conduct flavor and presentation checks
  • spearhead menu development and culinary innovation
  • oversee inventory management and optimize kitchen processes
  • uphold food safety and hygiene regulations
  • act as kitchen representative in menu presentations and client engagements
  • mentor and train culinary staff to maintain high standards
