Job Requirements

  • High school diploma or equivalent
  • minimum 2 years of experience in executive chef or similar leadership role
  • previous employment in luxury or fine-dining restaurants
  • knowledge of Mediterranean, Italian, and coastal cuisines
  • strong management expertise
  • ability to enforce health and safety compliance
  • effective problem-solving skills
  • capability to manage budgets and labor effectively

Job Qualifications

  • Minimum 2 years of prior relevant experience
  • prior experience in luxury or fine-dining restaurant environments
  • expertise with Mediterranean, Italian, and/or coastal cuisines
  • strong leadership and team management skills
  • excellent knowledge of food safety and sanitation standards
  • proficient in budget management and operational planning
  • ability to work in a fast-paced, high-volume environment
  • effective communication and interpersonal skills

Job Duties

  • Owns, leads and oversees daily commissary kitchen operations
  • manages fiscal budgets and labor productivity
  • handles scheduling and inventory control
  • ensures guest service standards are met
  • develops and executes menu strategies for profitability
  • represents commissary kitchens in divisional, property or corporate meetings
  • implements policies, operating procedures and training programs
  • maintains health, sanitation and cleanliness standards in kitchens
  • manages human resources including hiring, training, coaching and compliance
  • interacts with guests to ensure satisfaction and addresses complaints
  • collaborates with divisional directors and kitchen teams for seamless product delivery
  • maintains excellent knowledge of property’s food and beverage products and kitchen equipment
