The role of Executive Chef at Gaylord Hotels is a senior leadership position responsible for overseeing the entire kitchen operation, ensuring the delivery of consistent, high-quality culinary products across various food service areas including banquets, room service, restaurants, bars, lounges, and the employee cafeteria. The Executive Chef will demonstrate culinary expertise by engaging directly in food preparation tasks while effectively managing and guiding the kitchen staff. The position demands a strong focus on continuous improvement in both guest and employee satisfaction, alongside maximizing financial performance across all culinary functions.
This role entails managing all food-related functions, maintaining sanitation and food safety standards, and supervising all support areas such as the dish room and purchasing. The successful candidate will lead the kitchen management team by providing clear guidance for daily operations, setting performance standards, and fostering a workplace culture built on mutual trust, respect, and collaboration. They must be adept at financial management, including controlling food costs, supplies, and budgeting. Additionally, the Executive Chef will drive menu development, ensure compliance with food handling and safety regulations, and uphold brand quality standards in every aspect of food preparation and presentation.
Key responsibilities also include leading and developing staff through coaching, mentoring, and performance management, as well as ensuring that employees maintain required certifications and follow sanitation best practices. The Executive Chef will act as a role model for professional behavior, demonstrate new cooking techniques to the team, and actively support service behaviors that exceed guest expectations. Job Requirements
- High school diploma or GED
- minimum 6 years culinary or food and beverage experience, or 2-year degree in Culinary Arts or related major with 4 years relevant experience
- strong leadership skills
- excellent communication abilities
- knowledge of food safety and sanitation standards
- ability to manage multiple food service areas
- experience with budget management
- capability to mentor and develop team members
