The Executive Chef position at SkyChefs in Austin, Texas, is a unique opportunity to lead a large-scale culinary operation supporting airline catering near Austin Bergstrom International Airport. This role is focused on the management and oversight of a high-volume, production-driven kitchen that caters to around 85 commercial airline flights daily. Unlike a traditional restaurant executive chef role, this position demands precision, efficiency, and consistency at scale, emphasizing food safety, process optimization, and team leadership. The Executive Chef will oversee food production, ensure compliance with regulatory standards such as HACCP, and manage cost controls while championing quality and employee development. This role requires a flexible work schedule, including early mornings, nights, weekends, and holidays, to meet the operational demands of a 24/7, year-round service.
The successful candidate will have significant experience in commercial cooking with management capabilities, preferably with formal culinary education and specialized certifications. They must possess strong skills in operational budgeting, food cost control, training, and leadership. Effective communication and bilingual proficiency (English/Spanish) are highly desired to foster a diverse and inclusive work environment. Job Requirements
- High school diploma or equivalent
- Minimum 5 years of commercial cooking experience
- At least 2 years in a managerial or supervisory position
- Formal culinary education or apprenticeship recommended
- Certifications in food safety and sanitation required
- Ability to work flexible hours including early mornings, nights, weekends, and holidays
- Knowledge of HACCP, FDA Food Code, and local health regulations
- Strong leadership and organizational skills
- Effective bilingual communication in English and Spanish highly desired
Job Qualifications
- 5-7 years of progressive commercial cooking experience
- Minimum 2 years in a supervisory or management role
- Culinary school apprenticeship or formal culinary certification preferred
- Specialized certifications such as Certified Dietary Manager or Certified Executive Chef preferred
- Comprehensive knowledge of food safety, sanitation, and HACCP
- Strong financial acumen including budgeting and cost control
- Experience in team leadership and staff development
- Ability to communicate effectively in English and Spanish highly preferred
- Familiarity with unionized working environments an advantage
Job Duties
- Oversee all food production activities within the Austin culinary service center
- Manage inventory deviations and implement countermeasures as needed
- Adjust production plans and estimate food and equipment consumption
- Ensure recipe specification compliance and conduct quality checks
- Develop food products and menus collaboratively
- Control budget costs covering personnel and materials
- Implement and monitor food safety and hygiene regulations including HACCP
- Train and develop kitchen staff with a strategic approach
- Represent the kitchen to internal and external stakeholders
- Stay informed on industry trends and incorporate innovative practices
- Coordinate service schedules and assess profitability
- Participate in marketing efforts and company initiatives
