The Executive Chef 2 position at the University of The Incarnate Word is an exciting opportunity for a creative, detail-oriented, and highly motivated culinary professional to lead the culinary operations within a medium-sized account. This role is pivotal in shaping the dining experience by overseeing menu planning, ensuring compliance with brand standards, and executing food programs that delight and satisfy customers. The Executive Chef 2 is responsible for managing, mentoring, and training culinary staff, including cooks, stock workers, receivers, and utility workers. This leadership role demands a proactive and energetic individual who can maintain food quality, safety, and operational standards while fostering a positive and collaborative work environment.
In addition to culinary leadership, the Executive Chef 2 will handle various operational aspects such as financial management, including monitoring food costs, inventory control, and labor management. They will also manage culinary operations across multiple service areas, including catering, retail, and concessions. A key part of the role involves ensuring compliance with food safety, sanitation, and workplace safety standards and maintaining close collaboration with the maintenance department to keep all equipment in optimal working condition.

- minimum 2 years management experience
- minimum 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts

Job Duties
- Implements and coordinates the culinary function
- directs, trains, develops and mentors cooks and other culinary support, stock worker and receiver, and utility workers
- ensures food preparation, production and post production meet operational standards
- manages culinary operations for catering, retail, and concessions
- customer and client satisfaction
- financial management to include food costs, inventory, and labor
- manages food and physical safety programs for resident dining operations
- works with maintenance department to help keep all equipment running well
- responsible for purchasing, menu compliance, inventory, food cost analysis and food production forecasting
- ensure Sodexo culinary standards including recipe compliance and food quality are implemented
- have the ability and willingness to develop and motivate team members to embrace culinary innovations
- ensure food safety, sanitation and workplace safety standard compliance
- have working knowledge of automated food inventory, ordering, production and management systems
