At Texas Christian University (TCU) in Fort Worth, Texas, Sodexo is currently seeking an experienced and dynamic Executive Chef 2 to provide culinary leadership at the Kings Family Commons Building (KFCB). This pivotal role involves oversight of four distinct retail dining concepts within the university's vibrant dining scene. These concepts include Magnolia's Zero 7, an allergen-friendly dining initiative for students with medically diagnosed food allergies and dietary restrictions; The Press Cafe, a grab-and-go coffee and beverage program with food options; Calientes, a Mexican-inspired lunch and dinner outlet; and O'Brien's Burgers, a made-to-order burger venue featuring new menu items for the fall season.

The Executive Chef 2 will be responsible for ensuring food production meets the highest standards of quality, presentation, and safety while managing financial performance across these dining concepts. The role demands comprehensive culinary oversight, including recipe execution consistency, portion control, and maintaining presentation standards. A key responsibility also involves developing and managing production schedules to support both retail operations and commissary functions, ensuring operational fluidity and efficiency.

Additionally, the chef will lead menu execution efforts, seasonal promotions, and limited-time offerings that enhance guest experiences and culinary innovation. Continuous improvement initiatives aimed at boosting guest satisfaction and culinary creativity are integral to the role. Regular quality assurance reviews and culinary audits will ensure compliance with established standards and best practices.

A vital aspect of this role is allergen management and student engagement. The Executive Chef 2 will act as the culinary lead for Magnolia's Zero 7, ensuring safe meal preparation practices are rigorously followed to accommodate students' dietary restrictions. Collaborating closely with university dining representatives, students, families, and campus stakeholders, the chef will address dietary accommodation needs with a focus on safety and compliance. Training and coaching culinary teams on allergen awareness and specialized food preparation practices will also be essential, creating a knowledgeable and responsive kitchen environment.

Job Duties

  • Provide overall culinary leadership and oversight for all KFCB dining concepts
  • Ensure consistent execution of recipes, portion controls, presentation standards, and food quality expectations
  • Develop and manage production schedules to support retail operations and commissary functions
  • Lead menu execution, seasonal promotions, and limited-time offerings
  • Drive continuous improvement initiatives focused on culinary innovation and guest satisfaction
  • Conduct regular quality assurance reviews and culinary audits
  • Serve as the culinary lead for Magnolia's Zero 7, ensuring safe meal preparation for students with medically diagnosed food allergies and dietary restrictions
  • Partner with university dining representatives, students, families, and campus stakeholders to address dietary accommodation needs
  • Ensure strict adherence to allergen management protocols, cross-contact prevention procedures, and food labeling requirements
  • Train and coach culinary teams on allergen awareness and specialized food preparation practices
