The Executive Chef role at Cobalt Smoke & Sea is a rare opportunity for a culinary leader looking to make a significant impact beyond traditional kitchen management. This executive-level position offers an opportunity to lead all aspects of back-of-house operations, including the development of seasonal menus for lunch, dinner, brunch, happy hour, and special events. The Executive Chef will create standardized recipes, maintain food quality, manage food and labor costs, oversee vendor relationships, and implement systems for inventory, purchasing, and waste control. Beyond kitchen management, the role involves community engagement through chef’s dinners, wine events, and collaborations with culinary schools and apprenticeships, which support the growth of culinary talent and the restaurant’s brand reputation.

The successful candidate will bring a strong background in upscale casual, fine dining, or chef-driven environments, with proficiency in seafood, meat, sauce, pasta, and vegetable preparations. Experience with live-fire or wood-fired cooking techniques is highly valued. This leadership role demands someone who is confident yet approachable, passionate about mentoring, and capable of balancing creativity with financial discipline. The Executive Chef will work hands-on with the team and help develop effective kitchen systems to ensure consistency, efficiency, and high standards. In the first 90 days, the new Executive Chef will be expected to immerse themselves in the current operations, evaluate staffing and systems, establish clear kitchen standards, complete recipe costing and documentation, and develop a strategic menu plan that aligns with the restaurant’s identity. They will also implement effective inventory and labor control processes and build trust with both kitchen and front-of-house teams, setting the stage for ongoing growth and success. Job Requirements

  • Education in culinary arts or related field preferred
  • Significant progressive professional kitchen experience
  • Prior leadership experience in a kitchen environment
  • Ability to manage food cost, labor, purchasing, inventory, and waste effectively
  • Food Protection Manager certification or willingness to obtain promptly
  • Strong communication and organizational skills
  • Ability to work flexible hours including nights and weekends
  • Physical ability to work in a fast-paced kitchen environment
  • Passion for mentoring and team development

Job Qualifications

  • Significant progressive experience in professional kitchens
  • Prior experience as an Executive Chef, Chef de Cuisine, Executive Sous Chef, or senior Sous Chef
  • Experience in upscale casual, fine dining, private club, boutique hotel, or chef-driven restaurant environments
  • Strong scratch-kitchen background
  • Experience creating seasonal menus and daily features
  • Strong seafood, sauce, meat, pasta, vegetable, and modern American cooking skills
  • Understanding of live-fire, wood-fired, smoked, or charred cooking techniques is a plus
  • Demonstrated ability to manage food cost, purchasing, inventory, labor, and waste
  • Experience recruiting, training, mentoring, and retaining kitchen employees
  • Strong communication and problem-solving skills
  • Calm, organized, and professional leadership style
  • Food Protection Manager certification or ability to obtain promptly
  • Culinary degree welcomed but not required

Job Duties

  • Lead all back-of-house operations
  • Develop and execute seasonal lunch, dinner, brunch, happy-hour, and special-event menus
  • Create standardized recipes, portions, plating guides, and preparation procedures
  • Cost all recipes before they are placed on the menu
  • Maintain food quality, presentation, consistency, and ticket-time standards
  • Recruit, train, schedule, supervise, and mentor the kitchen team
  • Develop sous chefs, line cooks, prep cooks, dish staff, culinary students, and apprentices
  • Establish daily prep lists, production systems, station standards, and opening and closing procedures
  • Manage food purchases, vendor relationships, inventory, waste, and product rotation
  • Maintain food cost and kitchen labor within approved targets
  • Conduct regular inventory counts and review purchasing variances
  • Coordinate closely with front-of-house leadership
  • Train service staff on new dishes, ingredients, preparation methods, allergens, and suggested pairings
  • Maintain excellent sanitation, food-safety, and health-department standards
  • Oversee kitchen equipment care and preventative maintenance
  • Participate in marketing, food photography, community events, and guest-facing culinary experiences
  • Help establish culinary-school relationships, internships, and apprenticeship opportunities
