Job Description
Delaware North is a globally recognized hospitality and food service company distinguished by over a century of family-owned tradition and service excellence. Operating in iconic locations including sports arenas, national parks, casinos, and hotels, Delaware North delivers unique, high-quality guest experiences through various culinary and hospitality ventures. At American Family Field in Milwaukee, Wisconsin, home of the Milwaukee Brewers, Delaware North manages concessions, premium dining services, all-inclusive suites, clubs, as well as the J. Leinenkugel's Barrel Yard Brewery, Bar, and Restaurant. The company emphasizes local partnerships, working with numerous Milwaukee vendors to incorporate regional flavors into its food and beverage offerings, enhancing the authenticity and appeal of its culinary services.
The opportunity at hand is for a Chef de Cuisine to lead the culinary operations for the prestigious Truss Club, an exclusive premium club within American Family Field. This role involves overseeing the entire kitchen operation dedicated to this all-inclusive club, focusing on delivering refined menu execution, impeccable food quality, artistic presentation, and exceptional team leadership. The position is designed for a culinary expert passionate about creating elevated dining experiences within a fast-paced, high-volume hospitality environment. As Chef de Cuisine, you will spearhead daily culinary operations including menu planning, recipe development, buffet presentations, action stations, and special events that cater to discerning guests who expect excellence and attention to detail.
This leadership role offers a unique blend of hands-on cooking and strategic management. The Chef de Cuisine is responsible for ensuring adherence to recipes, portion control, preparation techniques, and plating standards, all while maintaining compliance with sanitation and health regulations. You will supervise and mentor the culinary team, fostering a positive and accountable kitchen culture. The position demands strong organizational abilities to manage scheduling, inventory, ordering, and cost controls to optimize performance and reduce waste. Coordination with front-of-house leaders is essential to ensure a seamless guest experience that matches the premium nature of the club.
This role is ideal for a culinary professional with at least five years of leadership experience in high-volume kitchens such as restaurants, clubs, hotels, catering services, or sports and entertainment venues. Expertise in premium food presentation and managing complex buffet and action station setups is critical. The company values candidates who bring creativity, a commitment to quality, and the ability to motivate diverse teams under pressure. Proficiency in computer skills and certifications in food safety such as ServSafe are required or the willingness to obtain them.
Embracing a flexible work schedule including nights, weekends, holidays, and event days is necessary due to the operational demands of the venue. Delaware North values personal and professional growth, offering a comprehensive benefits package and opportunities for advancement in a global hospitality network. The anticipated salary range for this role is $81,900 to $110,600 annually, complemented by an annual bonus plan or an uncapped sales incentive depending on the role specifics. This position highlights Delaware North’s commitment to hospitality excellence and employee development, inviting culinary leaders to contribute to a lavish dining experience at a premier sports entertainment venue.
