Job Qualifications

  • Two plus years of post-high school education, culinary education is desirable
  • five plus years of employment in a related position
  • hotel experience preferred
  • advanced knowledge of food profession principles and management
  • knowledge of hotel operations including marketing, security, personnel, business planning, maintenance, budgeting, quality assurance, hospitality law, and long-range planning
  • leadership skills to motivate and develop staff
  • ability to work effectively under deadlines
  • effective verbal and written communication skills with adaptable style

Job Duties

  • Direct the day-to-day operations of all areas of the kitchen including outlets, banquets, stewarding, and purchasing
  • manage human resources for the kitchen staff including interviewing, hiring, training, developing, coaching, and disciplining
  • plan and manage the procurement, production, preparation and presentation of all food in a safe, sanitary, and cost-effective manner
  • monitor and control kitchen and equipment sanitation to ensure compliance with health and safety standards
  • develop, implement, and manage the department budget with ongoing analysis of labor and food costs
  • develop and implement menus and backup processes within corporate guidelines to improve revenues and profit margins
  • execute and promote accident prevention programs to minimize liabilities
  • comply with attendance rules and maintain regular availability
  • perform any other job related duties as assigned
