Job Requirements

  • Bachelor's degree preferred
  • associate degree or minimum of 10 years culinary leadership experience in high-end kitchens
  • minimum 5 years experience in high-volume food production
  • prior airline catering experience
  • expert culinary skills
  • multi-lingual
  • knowledge of Michelin starred culinary standards
  • extensive knowledge of global raw materials
  • ability to create innovative menus
  • excellent interpersonal and communication skills
  • strong leadership and team management capabilities
  • proficiency with Microsoft Office
  • valid food handler's certificate
  • physical ability to stand, walk, reach, kneel and lift up to 30 pounds regularly
  • punctuality and consistent attendance
  • compliance with food safety and hygiene standards

Job Qualifications

  • Bachelor's degree preferred
  • associate degree (A.A.) or minimum of 10 years of culinary experience leading a kitchen in high-end establishments
  • expert culinary skills
  • multi-lingual
  • experience in Michelin starred restaurants or highly reputable institutions
  • extensive knowledge of global raw materials (foods)
  • knowledge of startups and menu development
  • experience creating exquisite culinary art including taste, creativity, and plating
  • ability to interact professionally with clients
  • minimum 5 years experience in high-volume food production and prior airline catering experience
  • excellent interpersonal skills
  • experience working within MEDINA Quality Food Assurance kitchens
  • strong communication skills internally and externally
  • expertise in international cuisine
  • experienced in process improvements and lean manufacturing
  • computer proficiency with Microsoft Office
  • valid food handler's certificate or equivalent

Job Duties

  • Develop standard operating procedures
  • increase productivity
  • control labor costs
  • control overproduction and produce to exact order numbers
  • fulfill internal supply chain to dish out cold food assembly and tray set up
  • comply with food ready times (FRT)
  • comply with exact quantities (order numbers)
  • maintain internal department communication, including shift and group meetings
  • conduct research on formulas, processing procedures, and layout of new food products based on R&D guidance
  • perform food modality testing
  • collaborate with Purchasing Department to source necessary materials
  • ensure receiving department fulfills requisition orders
  • standardize productive standard portfolio including preserving food hygiene
  • collaborate with Operations to manage projects and time-to-launch for new concepts
  • conduct training, coaching, and on-the-job training for staff
