Job Requirements
- Two plus years of post-high school education
- five plus years of related employment experience
- culinary education desirable
- hotel experience preferred
- advanced knowledge of food profession principles and practices
- knowledge of hotel operations and management
- leadership and staff development skills
- ability to work under pressure and meet deadlines
- effective communication skills
- willingness to comply with attendance rules and work availability
Job Qualifications
- Two plus years of post-high school education, culinary education desirable
- five plus years of employment in a related position
- hotel experience preferred
- advanced knowledge of food profession principles and management
- knowledge of hotel operations including marketing, security, personnel, budgeting, quality assurance, hospitality law, and planning
- leadership skills to develop and motivate staff
- ability to work effectively under deadlines
- effective verbal and written communication skills
Job Duties
- Direct the day-to-day operations of all kitchen areas including outlets, banquets, stewarding, and purchasing
- manage human resources in the kitchen including interviewing, hiring, training, coaching, conducting reviews, resolving problems, and disciplining as needed
- plan and manage procurement, production, preparation and presentation of all food in a safe and sanitary manner
- monitor and control maintenance and sanitation of kitchen, equipment and related areas to ensure a safe work environment
- develop and manage the kitchen department budget including labor and food cost control
- develop and implement menus and production procedures within corporate guidelines
- promote and execute the Accident Prevention Program to minimize liabilities
