Job Requirements

  • Two plus years of post-high school education
  • five plus years of related employment experience
  • culinary education desirable
  • hotel experience preferred
  • advanced knowledge of food profession principles and practices
  • knowledge of hotel operations and management
  • leadership and staff development skills
  • ability to work under pressure and meet deadlines
  • effective communication skills
  • willingness to comply with attendance rules and work availability

Job Qualifications

  • Two plus years of post-high school education, culinary education desirable
  • five plus years of employment in a related position
  • hotel experience preferred
  • advanced knowledge of food profession principles and management
  • knowledge of hotel operations including marketing, security, personnel, budgeting, quality assurance, hospitality law, and planning
  • leadership skills to develop and motivate staff
  • ability to work effectively under deadlines
  • effective verbal and written communication skills

Job Duties

  • Direct the day-to-day operations of all kitchen areas including outlets, banquets, stewarding, and purchasing
  • manage human resources in the kitchen including interviewing, hiring, training, coaching, conducting reviews, resolving problems, and disciplining as needed
  • plan and manage procurement, production, preparation and presentation of all food in a safe and sanitary manner
  • monitor and control maintenance and sanitation of kitchen, equipment and related areas to ensure a safe work environment
  • develop and manage the kitchen department budget including labor and food cost control
  • develop and implement menus and production procedures within corporate guidelines
  • promote and execute the Accident Prevention Program to minimize liabilities
