Job Requirements
- Five years chef experience in high volume restaurant, country club, catering or cultural attraction venue
- culinary arts degree
- ServSafe certified
- knowledge of HACCP
- strong interpersonal and communication skills
- proven leadership skills
- financial management and analytical skills
- problem solving and decision making skills
- physical ability to stand for extended periods and lift up to 35lbs
- ability to work varied hours including nights, weekends and holidays
- computer knowledge for basic office tasks

Job Duties
- Interview, hire, evaluate, reward, and coach kitchen personnel as appropriate
- develop culinary training programs for food production employees
- ensure safety training is completed with all staff upon hire
- train kitchen personnel in safe operating procedures and food production principles
- assist General Manager with sales forecasting
- direct and coordinate production and dish room staff
- maintain positive relationship with client staff
- manage employees according to labor laws
- maintain a clean, safe, and organized work environment
- uphold company policies and procedures
- perform SSA EXTRA Guest Service steps
- supervise inventory for all food and beverage areas
- prepare standard and gourmet food items
- track proper cooking and holding temperatures
- establish maintenance schedules for equipment
- facilitate maintenance and repairs
- ensure consistency and quality across operations
- plan menus based on market trends and nutritional considerations
- inspect food preparation and sanitation
- place food product orders and manage vendor communications
- evaluate quality of raw food and finished products
- enforce sanitary practices
- comply with food safety and health regulations
- process invoices and ensure vendor payments
- manage culinary operations
- control food cost and waste
- prepare operational reports and analyses
- analyze sales and inventory
- manage payroll and control profit
- schedule staff levels according to budget and forecast
- achieve sales, per capita, and budget goals
- incorporate sustainable resources in culinary selections
