We are currently seeking a dedicated and experienced Full Time Executive Chef to join the Gilt Bar team. This role offers an attractive compensation package of $100,000 per year with an added bonus structure, underscoring the importance we place on rewarding expertise and leadership. The Executive Chef will play a crucial role in maintaining and elevating the culinary standards of Gilt Bar. This individual will be instrumental in upholding the core values of Hogsalt, particularly focusing on delivering genuine hospitality, consistency, and premium quality to all guests. Beyond culinary excellence, the Executive Chef is expected to foster a collaborative and positive workplace culture that motivates the kitchen staff and aligns with the overall goals of the restaurant.

In this senior leadership role, the Executive Chef will oversee the entire kitchen operation, ensuring adherence to all company policies related to recruiting, hiring, training, and performance management. The position requires a strategic mindset with robust financial acumen, as the chef will be responsible for managing food costs, utilizing effective cost-of-goods-sold (COGS) strategies, and collaborating closely with the General Manager to optimize restaurant expenses, labor, and revenue. This role includes daily financial reviews, payroll approvals, and participating in monthly financial discussions where the chef will present insights based on profit and loss statements.

Operational duties extend beyond finance; the Executive Chef will develop back-of-house schedules, maintain kitchen inventory and recipe documentation, and ensure all food quality standards are strictly followed while holding vendors accountable for product excellence. Additionally, the role demands active communication with guests, employees, vendors, and leadership, reinforcing professional and efficient interactions at all times.

Training and development form another critical component of the Executive Chef’s responsibilities. This role entails organizing and updating training programs for front-of-house staff, scheduling practical examinations, and fostering a culture of continuous professional growth for all employees. Coaching is delivered consistently, supporting both culinary and front-of-house teams, highlighting the chef’s versatility and commitment to overall service excellence. The Executive Chef may also occasionally step into front-of-house positions, demonstrating leadership by example and hands-on involvement.

Job Requirements

  • Minimum of 5 years working in a fast paced full-service restaurant
  • 3 years of experience as an Executive Chef or senior kitchen leadership
  • In-depth COGS management experience
  • Strong financial understanding with proven strategies to improve a restaurant's financial health
  • Ability to identify problems and develop solutions in culinary and operational contexts
  • Open availability including evenings weekends and holidays
  • Ability to frequently lift items weighing up to 50 pounds
  • Must be able to work under the direction and approval of the Culinary Director
