The Director of Operations will take on a pivotal leadership role at a new multi-concept venue identified as The French Pantry and Little Miss Ha, located at 36 Granada Street, St. Augustine, FL. This emerging venue includes distinctive dining environments and additional hospitality features such as Le Petit Kitchen, Granada Bar, and Cache Cache. Each component offers a unique experience, from coffee and pastries in the morning to elevated dinner services, cooking classes, private chef dinners, and specialty cocktail bars including a reservation-only speakeasy. The complexity of operating multiple revenue centers under one roof requires a seasoned operations leader who excels in managing dynamic, fast-paced environments. The role demands a deep understanding of restaurant operations, financial management, and team leadership at a high level. The Director will work closely with ownership to develop and implement strategic plans that maximize sales, control costs, and enhance guest satisfaction across all facets of the venue. Performance metrics such as EBITDA goals and prime cost management will be critical, emphasizing labor, food, and waste control. This position calls for a hands-on leader who can coach, develop, and inspire a broad management team, including executive chefs, general managers, beverage programmers, marketing, catering, and service staff. Job Requirements
- Bachelor's degree in hospitality management, business administration, or related field preferred
- Minimum 7 years of progressive experience in restaurant operations management
- Proven leadership skills in managing multi-unit or multi-concept hospitality venues
- Strong financial acumen with demonstrated experience in budgeting and cost control
- Excellent communication and interpersonal skills
- Ability to work onsite with a flexible schedule
- Strong decision-making and problem-solving capabilities
- Ability to thrive in a fast-paced, multilayered environment
- Proficiency in computer software relevant to restaurant management
- High level of integrity and professionalism
Job Qualifications
- Extensive experience in high-volume restaurant management, preferably in a multi-concept setting
- Experience managing and coordinating executive chef and culinary team
- Experience managing general managers
- Experience managing guest service managers
- Experience managing wine and beverage programming
- Experience managing catering and event personnel
- Experience managing marketing personnel
- Experience managing line level FOH and BOH staff
- Deep knowledge of the hospitality industry and a track record of delivering exceptional guest experiences and relationships
- Proficiency in restaurant financial management, including budgeting, cost control, and revenue optimization
- Excellent interpersonal and communication skills to build and maintain relationships with staff, vendors, and guests
- Strong organizational skills to effectively manage simultaneous operations
- Utilize sharp financial acumen to monitor and optimize restaurant financial performance
- Foster relationships with staff, vendors, and guests to ensure a positive working environment and customer satisfaction
Job Duties
- Lead and oversee restaurant operations across multiple concepts within the building
- Lead restaurant operations to drive sales and achieve EBITDA goals in line with our strategic plan
- Collaborate with owners to establish budget and sales targets
- Ensure prime cost goals are met by guiding labor, food, waste, and other controllable measures
- Uphold company standards, policies, and procedures within the operations team
- Coach and train leadership on standards and implement corrective actions when necessary
- Foster the growth and development of the management team and staff in efforts to ensure guest satisfaction is maximized
- Establish a company culture that aligns with our core values and promotes retention
- Cultivate relationships with guests to ensure exceptional dining experiences
- Manage schedules for key management staff
