The Hilton University of Florida Conference Center is currently seeking a seasoned Director of Food & Beverage to lead all aspects of the food and beverage operation. This role is pivotal in the hotel's executive leadership structure and offers a unique opportunity to drive exceptional guest experiences, lead and develop team members, and oversee the financial performance of various food and beverage outlets. The director will manage restaurant outlets, bars, banquet and catering services, culinary operations, and stewarding activities. This position requires a strategic leader capable of fostering a culture of accountability, teamwork, continuous improvement, and guest excellence while maintaining compliance with brand standards, health regulations, and safety policies. The successful candidate will be instrumental in shaping the property's overall strategy and ensuring operational success.

In this leadership role, the Director of Food & Beverage will closely partner with the Executive Chef to develop innovative menus and dining experiences tailored to guest preferences and current market trends. Maintaining consistent food quality, service delivery, and venue cleanliness is essential to uphold the hotel’s esteemed reputation. Additionally, the director will oversee banquet and catering functions that support large-scale conferences, meetings, weddings, and university-related events. Collaboration with sales and events teams is key to delivering flawless event execution. This role also involves rigorous financial management responsibilities, including budgeting, forecasting, labor and cost control, and revenue enhancement through menu engineering and promotions.

The ideal candidate will have at least five years of food and beverage leadership experience in a full-service hotel, resort, or conference center. Strong financial acumen, excellent communication, and proven success leading large, diverse teams in high-volume environments are critical. Flexibility to work evenings, weekends, and holidays ensures the highest level of service. Preferred qualifications include experience with Hilton brand standards, conference center or event hotel expertise, a bachelor’s degree in hospitality or related fields, and certifications such as ServSafe and alcohol service trainer credentials. Compensation for this role ranges from $80,000 to $120,000, complemented by a competitive salary, bonus opportunities, comprehensive benefits, paid time off, 401(k) with company match, hotel travel discounts, and professional development resources. Job Duties

  • Direct and oversee all food and beverage operations including restaurant outlets bars banquet events catering culinary operations and stewarding
  • Lead mentor and develop department managers chefs supervisors and hourly team members
  • Foster a culture of accountability teamwork guest service excellence and continuous improvement
  • Ensure compliance with Hilton brand standards health department regulations safety requirements and company policies
  • Participate as a key member of the hotel's Executive Committee and contribute to overall property strategy and performance
  • Partner with the Executive Chef to develop innovative menus and dining experiences
  • Ensure consistent food quality presentation service delivery and cleanliness throughout all venues
  • Monitor guest feedback and implement corrective action plans when necessary
  • Oversee all banquet and catering operations supporting more than 25,000 square feet of meeting and event space
  • Collaborate with the Sales and Events teams to ensure flawless execution of conferences meetings weddings social events and university-related functions
  • Participate in weekly BEO and event planning meetings to ensure operational readiness
  • Develop and manage annual operating budgets forecasts and capital expenditures for all food and beverage departments
  • Analyze financial statements labor reports food cost reports and revenue trends to drive profitability
  • Establish and maintain controls for labor food beverage and operating expenses
  • Recruit train coach and retain high-performing food and beverage professionals
  • Conduct performance evaluations and succession planning for department leaders
  • Oversee purchasing receiving inventory controls and vendor relationships
  • Ensure compliance with food safety sanitation alcohol service and workplace safety regulations
