The role of Director of Food & Beverage at Crestline Hotels & Resorts calls for a dynamic leader who can oversee the successful management and administration of all food and beverage operations within the hotel. This comprehensive role includes responsibility for restaurants, bar/lounges, room service outlets, kitchens, and banquet facilities when applicable. The Director of Food & Beverage's primary goal is to ensure a balanced approach between providing an outstanding food and beverage experience for guests and maximizing the profitability of the department.
This position involves strategic planning, implementation, and operational control to foster an exceptional culinary environment. The Director of Food & Beverage will work closely with the Executive Chef and other culinary staff to ensure that food preparation, presentation, portion sizes, and garnishing meet the highest standards. The role encompasses significant leadership duties such as training, coaching, motivating, and engaging food and beverage teams, including restaurant staff, supervisors, and managers. Day-to-day leadership ensures that employees are empowered, competent, and motivated to deliver superior service.
Furthermore, the Director of Food & Beverage operates as a vital liaison between the food and beverage department and other hotel departments, facilitating seamless communication and coordination. This role demands oversight of key operational metrics such as budget monitoring, payroll controls, and financial transaction reviews to keep expenditures within authorized limits. The Director will also monitor compliance with health, safety, and fire regulations relevant to food preparation, serving, and facility maintenance.
Critical responsibilities include investigating and resolving guest complaints related to food quality and service, overseeing order deliveries to guarantee product quality and quantity, and maintaining strict inventory controls of food, beverage, equipment, and liquor. The Director is charged with developing innovative food and beverage strategies, menu planning, strategic marketing for revenue growth, and maintaining excellent relationships with vendors and service providers to ensure quality equipment maintenance and waste management.
This position demands a seasoned professional, ideally with a bachelor's degree in a related field or equivalent experience, proficient in computer and hotel system applications such as Microsoft Office and MICROS. Job Requirements
- Bachelor's degree in related field or high school diploma with extensive experience
- minimum five years related experience with degree or seven years without
- computer skills required
- familiarity with Microsoft Office
