The Director of Culinary is a pivotal leadership role responsible for overseeing the strategic vision, menu development, and back-of-house operations for all restaurants within our group. This role requires a strong combination of culinary expertise, operational savvy, and leadership skills to drive culinary innovation and maintain uniform food quality across multiple locations. The Director will spearhead the creation and rollout of innovative menus that reflect evolving food trends while ensuring consistent execution through standardized recipes and plating guides. This position involves managing food costs, negotiating with vendors for optimal ingredient sourcing, and overseeing quality assurance initiatives to uphold rigorous standards.

Moreover, the Director of Culinary enforces comprehensive standard operating procedures covering preparation, line execution, and closing protocols to ensure smooth kitchen operations. Food safety remains a top priority, with the role tasked with compliance to all relevant regulations including the FDA Food Code, OSHA guidelines, and local health department mandates. This leadership position also plays a critical role in workforce development, responsible for recruiting, onboarding, and mentoring executive and head chefs, as well as developing training programs to support culinary excellence and staff retention.

The ideal candidate will bring at least five years of leadership experience in a multi-unit culinary setting, with deep knowledge of kitchen operations, food cost management, and team leadership. A culinary arts or management degree is preferred, alongside current ServSafe certifications. The position demands frequent travel to various restaurant sites for inspections, audits, and new store openings, requiring flexibility and a hands-on approach.

Job Requirements

Job Qualifications

  • minimum of 5 years as a multi-unit executive chef, corporate chef, or culinary director
  • degree in culinary arts or culinary management preferred
  • equivalent professional experience required
  • deep understanding of food cost metrics, yield analyses, and back-of-house inventory software
  • proven ability to manage, inspire, and train remote culinary teams across multiple locations
  • current ServSafe Manager and ServSafe Allergens certifications required
  • willingness to travel frequently to various locations up to 50-75 percent of the time for audits and openings

Job Duties

  • design, test, and implement innovative menus that align with brand identity and food trends
  • create detailed, cross-utilizable, and scalable recipe manuals with precise plating guides
  • audit theoretical food costs regularly to hit target margins through smart pricing and ingredient selection
  • manage the research and development pipeline for limited-time offers and seasonal menu updates
  • source high-quality ingredients and negotiate national or regional pricing contracts with vendors
  • oversee back-of-house inventory systems to track waste, prevent theft, and optimize stock levels
  • establish rigorous quality control standards for incoming raw products and finished dishes
  • develop and enforce uniform standard operating procedures for prep, line execution, and closing shifts
  • ensure every kitchen strictly adheres to FDA Food Code, local health department mandates, and OSHA guidelines
  • assist with kitchen design, equipment procurement, and workflow optimization for existing and new store openings
  • recruit, onboard, and mentor executive chefs and head chefs across all locations
  • conduct comprehensive hands-on training workshops for all new menu rollouts and culinary systems
  • evaluate kitchen leadership performance and establish clear professional development paths
  • foster a collaborative, professional, and high-energy kitchen environment to maximize retention
