The role of Culinary Sushi Prep Cook at Levy is an exciting opportunity to join a motivated culinary team at 310 Provisions located within the Intuit Dome. Key responsibilities for the Culinary Sushi Prep Cook include preparing sushi rice, fresh fruits, and vegetables; learning fish preparation techniques including scraping, rolling, and rice molding; assisting with plating and seasoning; and maintaining accurate temperature logs to comply with food safety protocols. The position involves close collaboration with Sushi Cook 1 to ensure product quality and freshness. Candidates will also gain hands-on experience with kitchen and sushi equipment such as ovens, broilers, grills, steam kettles, rice cookers, and maki machines. An essential aspect of the role is maintaining impeccable sanitation standards, proper labeling, and food storage practices to align with HACCP guidelines.

Job Requirements

  • Minimum 2 years experience in culinary field with a focus on high volume production
  • Culinary education degree or equivalent experience required with less than 2 years experience
  • Must be at least 18 years of age
  • Proficient knife skills
  • Basic knowledge of technology
  • Ability to read and understand recipes
  • Ability to multitask in a fast paced environment
  • Ability to work under pressure
  • Ability to adapt to production requirements

Job Qualifications

  • Passion for culinary and delighting guests with food

  • Certification from CIA or equivalent
  • Recommendation from school

Job Duties

  • Store all sushi produce clean and store to the 310 Provisions sushi standards
  • Prepare fruits and vegetables and prepare sushi rice for cooking
  • Check in product with sushi cook 1 to learn quality check
  • Learn to prep fish scrape fish learn to roll sushi mold rice help plate and sauce
  • Fill out temperature logs
  • Use basic knowledge of all kitchen and sushi equipment including adjusting thermostat controls to regulate temperature
  • Inventory product read menus BEOs Restaurant Orders
