The Culinary Operations Coordinator at Hissho Sushi plays an essential role within the Culinary Team and reports directly to the Director of Product Innovation & Development. This full-time, in-person position involves supporting day-to-day culinary operations with flexibility to adapt to evolving business needs. The role entails active involvement in new recipe and program development initiatives and assembling sushi kits for field presentations. Additionally, the coordinator plays a pivotal role in preparing food for marketing photoshoots while maintaining a clean and fully stocked tasting room, ensuring it is always stage-ready for executive and retailer meetings.
The position also includes responsibility for inventory management, such as conducting audits of perishable and non-consumable items and coordinating quarterly employee sample giveaways in collaboration with human resources. The role requires occasional travel to franchise locations to provide hands-on operational support, training, and to ensure consistency in food quality and presentation across all outlets. The ideal candidate has an extensive culinary background, especially in sushi and Asian hot foods, strong food presentation skills, and a meticulous attention to detail. Job Requirements
- 2+ years of experience in sushi and hot food preparation with a focus on Asian cuisine
- excellent communication and interpersonal skills
- proficient in using Outlook email and other basic computer applications
- familiarity with Excel is advantageous
- comfortable in presenting products in tastings
- ability to manage multiple projects and priorities simultaneously while maintaining attention to detail and accuracy
- self-managed person who can work on various projects with a diverse team with minimal direction or oversight
- willingness to travel and work flexible hours including evenings and some weekends
- ability to travel 10-20%
- positive attitude and resilience
- ability to lift 50lb and stand for prolonged periods
- college or culinary degree preferred
- ServSafe certified
Job Qualifications
- 2+ years of experience in sushi and hot food preparation with a focus on Asian cuisine
- excellent communication and interpersonal skills
- proficiency in Outlook and basic computer applications with familiarity in Excel
- comfortable presenting products in tastings
- ability to manage multiple projects and priorities while maintaining accuracy
- self-managed with minimal supervision
- positive attitude and resilience in a fast-paced environment
- proficiency in another language is a plus
- college or culinary degree preferred
- ServSafe certification
Job Duties
- Collaborate with the culinary team to support recipe, menu, program developments, and ingredient testing
- fulfill standardized sushi kits for quarterly retail presentations and manage time-sensitive national shipping
- prepare the corporate studio and tasting room for marketing photoshoots and assist with food styling
- check inventory products for non-conforming specifications from customer complaints
- maintain and reset the corporate tasting room daily to ensure a stage-ready environment
- perform routine audits of perishables, smallware, and non-consumables to maintain standard levels for kitchen essentials
- travel to franchise locations to provide hands-on training and operational support
- manage the quarterly sample redistribution program by auditing overstock and coordinating with HR for employee giveaways
- support product presentations with internal teams and retail partners
- represent the Hissho brand at tradeshows and meetings
- adhere to company standards, policies, and food safety regulations to ensure compliance
