The role of Culinary Host at Armstrong Collective is integral to its commitment to delivering unparalleled guest service and life-changing experiential journeys. Specifically supporting the onboard operations of the Canyon Spirit route, which spans a three-day rail journey from Denver, Colorado to Salt Lake City, Utah, the Culinary Host is responsible for the preparation and presentation of upscale meals in the Signature and Premium railcars. Reporting directly to the Onboard Management Team, the Culinary Host is a pivotal member of the team tasked with ensuring guests have an exceptional dining experience characterized by high culinary standards and attentive service.
The position demands exceptional culinary skills combined with top-tier guest engagement to create a seamless, memorable onboard atmosphere. The Culinary Host is expected to prepare dishes with precision, adhering to established recipes, plating specifications, and management of food presentation to meet the company’s premium service standards. In addition to culinary duties, the role includes organizing and maintaining the galley’s cleanliness and operational efficiency, managing food inventories and supplies, and ensuring food safety compliance following HACCP guidelines. Conducting food audits, monitoring quality control, and maintaining proper food handling procedures underpin the daily responsibilities.
Safety remains a top priority; this role requires regular access to active railway areas and adherence to rigorous safety protocols. The Culinary Host must be highly vigilant about health and safety standards for guests, colleagues, the public, and the environment. This includes compliance with protective equipment policies, prevention of cross-contamination, and adherence to all state regulations for food and alcoholic beverage service.

The Culinary Host works closely with other onboard team members, Train Manager, and leadership to deliver consistent and thoughtful service. Job Qualifications

Job Duties
- Engage and interact comfortably with guests to explain the menu and take orders
- Prepare dishes following Canyon Spirit recipes and plating specifications
- Sanitize dishes and equipment efficiently to support daily services
- Organize food preparation to ensure smooth service in coordination with Train Manager
- Maintain inventory of food, supplies, and equipment according to procedures
- Document and communicate food quality and presentation issues through audits and leadership communication
- Ensure galley cleanliness and organization
- Follow up with guests on food allergies and dietary preferences
- Adhere to all safety, security, and food handling standards including HACCP
- Abide by alcohol service regulations from company and state policies
- Report safety issues promptly to supervisors
- Maintain positive teamwork attitude to create meaningful guest moments
- Adapt and work across multiple railcars and teams during the journey
- Collaborate with other hosts for seamless service and guest issue resolution
- Support training of new team members and improve operational efficiencies
- Manage waste reduction initiatives and composting efforts
- Clean and stock railcars, galleys, and washrooms at journey’s end
- Reconcile inventory levels accurately at end of each journey
- Communicate using company tools such as Microsoft Teams, Outlook, and SharePoint
- Perform other duties assigned by Onboard Leadership
