The Creative Pastry Specialist role within American Cruise Lines is a key position designed for a skilled and imaginative pastry chef passionate about crafting diverse and exquisite desserts and baked goods. This full-time, exempt position offers the unique opportunity to work onboard our luxury vessels during the 2026 season, providing not only a competitive daily rate but also comprehensive health benefits, travel accommodations, and training. The role demands creativity, attention to detail, and a strong foundation in pastry arts, including intricate confectionery work and the ability to blend flavors and aesthetics to enhance the overall dining experience.

As a Creative Pastry Specialist, you will lead the preparation and artistry of desserts, pastries, breads, and cookies, ensuring every item meets high presentation and quality standards. You will be responsible for managing daily menu execution, including setting up and maintaining your workstation according to FDA standards and meeting portion control and recipe specifications. Close collaboration with the Executive Chef is essential for communicating inventory needs and equipment concerns, scheduling the production of baked goods efficiently, and maintaining fresh inventory. This position also requires adaptability to the unique work environment aboard a cruise vessel, including the ability to perform under the physical demands of sea life and work schedules of approximately 12 hours daily, seven days a week, for periods of 6 to 8 weeks followed by 2 weeks of unpaid vacation.

Job Requirements

  • Work 7 days a week while onboard the ship
  • Commit to 6-8 weeks of work followed by 2 weeks of unpaid vacation
  • Adaptability to ship motions including surge, sway, heave, roll, pitch, and yaw
  • Ability to respond to last-minute requests or changes promptly
  • Capability to multi-task and thrive in a team setting
  • Work calmly and effectively under pressure
  • Ability to work approximately 12 hours per day
  • Assist in onboard emergencies including climbing a ladder and maneuvering through a 20" diameter hatch
  • Stand for the duration of the shift
  • Lift up to 20 lbs frequently and up to 50 lbs occasionally
  • Frequent bending, squatting, and reaching as necessary
  • Ability to reside and work onboard a vessel for extended periods
  • Use stairs regularly

Job Qualifications

  • Associate's degree in Culinary Arts or Pastry & Baking, or 3-5 years of relevant experience with a focus on quality production
  • Basic understanding of professional baking and pastry techniques, along with food & beverage knowledge
  • Strong problem-solving, organization, and self-motivation skills
  • Commitment to delivering exceptional service
  • Ability to pass a pre-employment drug test
  • Completion of a criminal background check
  • Possession of a Transportation Worker Identification Credential (TWIC)
  • Capacity to perform essential job functions with or without accommodation

Job Duties

  • Lead the preparation and artistry of desserts, breads, pastries, and cookies for the vessel on a daily basis
  • Prepare and serve menu items following established recipes, portion sizes, and presentation standards
  • Set up, maintain, and break down the work station according to FDA standards
  • Taste all products to ensure quality and consistency
  • Communicate product shortages or equipment issues to the Executive Chef
  • Keep accurate counts of all food items to align prepared quantities with requirements
  • Schedule the production of all baked goods for efficiency
