California Correctional Health Care Services (CCHCS) is a vital state agency dedicated to providing comprehensive healthcare services to California's incarcerated population. Operating within the California Medical Facility located in Solano County, CCHCS manages medical, dental, and mental health care for inmates, ensuring their well-being while they serve their sentences. The role of Correctional Supervising Cook (CF) at California Medical Facility is a permanent part-time position with a monthly salary range of $2,752 to $3,383. This key supervisory role involves overseeing and training staff and incarcerated workers responsible for preparing meals tailored to patients' therapeutic dietary needs in a correctional health care setting. The Correctional Supervising Cook ensures compliance with relevant regulations, including Title 15, Department Operations Manual, California Code of Regulations Title 22, and standards such as the California Retail Food Code and Food & Nutrition Services Manual. This position also supervises cleaning and sanitation efforts to maintain a hygienic kitchen environment and upholds safety and order among incarcerated individuals in the facility.
Under the direction of the Food Administrator I/II or Supervising Correctional Cook, DOC, the incumbent will perform essential oversight of food preparation operations that meet physician-prescribed diets for patients. The role demands a thorough understanding of correctional facility policies, attention to food safety standards, and the ability to maintain calm and control in a secured environment. This position also plays a critical role in supporting the safety of both personnel and property within the kitchen and dining areas.
Applicants must have either one year of experience in a California state service Cook Specialist II role or equivalent supervisory experience over cooks and food service workers. A high school diploma or equivalent educational attainment is required. Candidates are also required to pass a state examination to qualify for listing.
The position requires a background investigation and medical clearance prior to hiring. Candidates new to CCHCS must also undergo tuberculosis testing and Live Scan fingerprinting. The hiring process emphasizes creating an inclusive and equitable workplace that values diversity and collaboration.

Job Qualifications
- One year of experience in the California state service performing duties of Cook Specialist II or similar role
- Two years supervisory experience over cooks and food service workers is desirable
- Equivalent to completion of the twelfth grade
- Ability to supervise and train a diverse team including incarcerated workers
- Knowledge of correctional facility policies and food safety regulations
- Ability to maintain safety and order in a correctional setting
- Successful completion of state examination for Correctional Supervising Cook
Job Duties
- Supervise and train staff and incarcerated workers responsible for meal preparation
- Oversee the preparation and dispensing of therapeutic diets as per physician orders
- Ensure adherence to departmental and institutional policies including Title 15, Department Operations Manual, California Code of Regulations Title 22, and related food safety manuals
- Supervise cleaning and sanitation of kitchen facilities and equipment
- Maintain order and supervise conduct of incarcerated workers
- Protect and maintain the safety of persons and property within the kitchen and dining areas
- Support compliance with all food and nutrition service standards
