Job Requirements
- High school diploma or equivalent
- current food handler’s card
- ServSafe certification preferred
- prior experience in institutional or correctional food service operations preferred
- ability to work rotating shifts and weekends
- ability to maintain security and discipline in a correctional kitchen environment
- physical ability to perform kitchen tasks including lifting and standing for extended periods
- U.S. work authorization

- Possession of a valid food handler's card
- ServSafe certification
- experience in food preparation and kitchen operations
- ability to instruct and supervise inmates
- knowledge of food safety and sanitation standards
- capability to follow security protocols

Job Duties
- Instruct and train adult inmates and/or assist cooks in operation of kitchen equipment
- follow established security rules and regulations in kitchen area
- prepare and oversee preparation of vegetables, salads, desserts, and baked goods
- participate in cleaning food preparation areas, kitchen equipment, dining rooms, and storerooms
- observe and inspect work to ensure safety and sanitation compliance and proper work completion
- provide firsthand information to improve work quality and quantity
- check and fill in job completion charts
- assist in receiving and storing food and supply deliveries
- assist in preparing special diet trays for inmates
- maintain control of kitchen utensils, tools, and equipment for security
- serve food to inmates and staff
- maintain general cleanliness and security in food service areas
- determine quantities of food to prepare
- document daily meal counts and production records
- conduct inspections of kitchen, food storage, and dining areas
