Job Requirements
- Minimum of 5 years experience in kitchen operation of a hotel, restaurant, or club
- Ability to read and comprehend simple instructions and short correspondence
- Ability to write simple correspondence
- Effective presentation skills in small group or one-on-one situations
- Basic math skills including addition, subtraction, multiplication, and division
- Ability to apply common sense understanding to carry out detailed instructions
- Physical ability to stand for long periods and use hands to handle food
- Ability to lift and/or move up to 25 pounds occasionally
- Availability to work all scheduled shifts including weekends and holidays
- Adherence to food health and safety standards and sanitation policies
Job Qualifications
- Minimum of 5 years experience in kitchen operation of a hotel, restaurant, or club
- Knowledge of food health and safety regulations
- Ability to follow recipes and plating guides accurately
- Ability to work efficiently in a fast-paced environment
- Communication skills to effectively coordinate with supervisors and team members
- Culinary school education preferred but not mandatory
- Basic math skills including addition, subtraction, multiplication, and division
- Ability to comprehend and write simple instructions and correspondence
- Ability to apply common sense understanding to execute detailed instructions
Job Duties
- Prepares, cooks, and serves meals as directed by the Sous Chef
- Responsible for full knowledge of menus and recipes including daily features
- Works proficiently at every station in all club outlets
- Covers all shifts required by the culinary operation seven days a week, 365 days a year
- Completes daily preparation tasks without constant supervision
- Maintains and updates daily preparation par lists based on business demands
- Ensures freshness of all daily products on hot line and pantry station
- Communicates kitchen needs and requirements to supervisors and Sous Chefs
- Adheres to all food health and safety regulations
- Sets up, cleans, and organizes workstations and maintains them throughout the shift
- Prepares ingredients including washing vegetables, chopping, and seasoning meats
- Prepares oven, utensils, and grill for the shift
- Follows recipes and plating guides provided by the Chef
- Cooks all orders according to food health and safety standards
- Handles multiple food orders including hot and cold preparations
- Monitors multiple orders as new requests arrive
- Ensures each order has the correct food and sides
- Stores all food properly based on safety standards
- Sanitizes and cleans workstations and utensils throughout the shift
- Assists other cooks or team members when needed
- Plates a variety of meats, seafood, poultry, vegetables, and other foods
- Assumes full responsibility for the quality of products served
- Stocks and maintains sufficient levels of food products
- Labels and dates all prepared food
- Maintains a clean and sanitary workstation including tables, shelves, grills, broilers, fryers, pasta cookers, sauté burners, convection ovens, flat tops, range and refrigeration equipment
- Follows proper plate presentation and garnish setup
- Assists in food prep assignments during off-peak periods
- Closes kitchen properly following closing checklist
- Performs other related duties as assigned by Sous Chef or manager-on-duty
