The Pastry Cook role at LEV Restaurant Group is a critical component of the culinary team, specializing in planning, preparing, and setting up an array of quality products in all areas of the pastry department. This position demands expertise in producing pastries, desserts, breads, ice creams, sorbets, creams, simple syrups, amenities, displays, centerpieces, and special request items. The Pastry Cook is responsible for maintaining the highest quality standards and adhering to detailed departmental specifications to enhance guest experiences across all outlets, banquets, and events. In this role, the Pastry Cook will execute a variety of essential duties, including managing recipe standards and food supply levels, preparing sweet items such as cakes, fruit compotes, chocolates, and breads for various dining venues, and ensuring all food preparation areas and equipment meet health department standards. The role involves a collaborative spirit, assisting with the plating of pastries and desserts, monitoring production schedules to meet timelines, and contributing to artistic food presentations. Prioritization, organization, and delegation are vital to success, along with a focus on maintaining correct food handling and storage practices, supporting portion control and waste reduction efforts. The ideal candidate will bring at least two years of experience as a Pastry Cook, have a high school diploma or GED equivalent, and culinary certification preferred. The physical demands include the ability to stand for extended periods, lift up to 50 pounds (or more with assistance), and mobility within cold storage environments. Job Requirements
- High school diploma or GED equivalent
- Minimum 2 years prior experience as a pastry cook required
- Culinary certification preferred
- Ability to stand for prolonged periods of time
- Able to lift at least 50 pounds and if more must be with assistance
- Must be able to work a variety of shifts including weekends and holidays
- Ability to perform in a fast paced environment
- Ability to move quickly turning from left to right or right to left
- Reach overhead and below the knees, including bending, twisting, pulling, and stooping
- Ability to be mobile in walk-in refrigerator and freezer with temperatures ranging from 40 degrees F to -10 degrees F
Job Qualifications
- Demonstrate adequate pastry skills and operation
- Must be able to work a variety of shifts, including weekends and holidays
- Must be able to perform in fast paced environment
- Knowledge of supplies, equipment, and/or services ordering and inventory control
- Ability to monitor and/or maintain quality control standards
- Ability to prepare and bake a variety of pastries, rolls and/or other baked goods
- Interpret and follow through on a variety of instructions furnished in written and oral form
- Ability to receive, stock, and/or deliver goods
- Knowledge of maintenance and care of culinary facilities, equipment, supplies, and materials
- Knowledge of food preparation and presentation methods, techniques, and quality standards
Job Duties
- Understand and maintain all standard pastry recipes
- Ensure all food supplies necessary for service are in appropriate supply on a timely basis
- Responsible for production of sweet items, pastries, cakes, fruit compotes, breads, chocolates, etc. for all outlets as well as banquets and amenities
- Keep walk-in, prep area and equipment up to Health Department standards at all time
- Assist in producing and plating pastries and desserts
- Inspect orders to ensure high quality and presentation
- Work well under pressure of meeting production schedules and timelines for pastry needs
