The role of Cook III in this fine dining restaurant is crucial for maintaining the kitchen's exceptional standards. Reporting directly to the Executive Sous Chef, the Cook III is responsible for preparing, seasoning, and cooking a wide range of menu items, including soups, meats, vegetables, and desserts. This includes various cooking methods such as sautéing, poaching, pan-frying, deep-frying, braising, baking, roasting, broiling, and steaming to ensure the highest quality dishes are consistently delivered. The position requires a strong knowledge of recipes and cooking techniques, the ability to maintain mise-en-place, and a commitment to food safety and sanitation standards.

As Cook III, you will play a leading role in training more junior cooks, ensuring proper mixture, taste, and seasoning of all foods, and maintaining clear communication about food preparation levels and ordering needs. The role requires regular collaboration with service managers to guarantee seamless food service and customer satisfaction. Maintaining cleanliness, organization, and operational efficiency in the kitchen is paramount, along with adhering to all health and safety practices. Job Requirements

  • High school diploma or equivalent
  • Minimum of 3 years cooking experience preferably in fine dining
  • Ability to follow recipes and proper cooking techniques
  • Strong palate for tasting and seasoning
  • Ability to train and coordinate junior staff
  • Knowledge of health safety and sanitation practices
  • Ability to work scheduled shifts including weekends and holidays
  • Physical ability to lift up to 50 pounds
  • Compliance with uniform and grooming policies
  • Effective communication skills
  • Ability to work under pressure and maintain composure

Job Qualifications

  • Proven experience as Cook III or similar role preferably in fine dining

Job Duties

  • Work scheduled shifts report to work on time comply with uniform policy
  • Work in tandem with service managers to provide exceptional service
  • Ensure proper recipes are followed and train on mixing and cooking of all foods
  • Taste food of self and others to ensure proper taste and seasoning
  • Prepare and maintain mise-en-place for outlets
  • Communicate about prep levels and food inventory needs
  • Maintain cleanliness sanitation and organization standards in kitchen
  • Communicate equipment maintenance needs to Chef or Sous Chef
  • Assist in training Cook I and Cook II staff on station work and cooking
  • Coordinate food rotation quality shelf life prep quantities and utilization
  • Assist in duties for functions such as action stations and carving
  • Follow personal hygiene grooming and health and safety practices
  • Ensure compliance with kitchen and food safety policies
  • Attend and communicate club training as requested
  • Ensure adherence to house rules and emergency procedures
  • Conduct and teach regular training within the department
  • Lead and promote teamwork ensuring equality without discrimination or harassment
  • Adhere to all food handling and sanitation laws codes and regulations
  • Follow club’s policy on confidentiality and ethics
  • Perform other tasks as requested by management
