Job Requirements

  • High school diploma or equivalent
  • minimum ten years of experience in high-volume food preparation and cooking
  • ability to demonstrate competency in at least four kitchen stations
  • proficiency in knife skills
  • knowledge of food service safety practices and temperature control
  • ability to read and interpret production tickets and meal orders
  • experience with various cooking methods and kitchen equipment
  • strong communication and customer service skills
  • ability to work evenings and full-time hours

Job Qualifications

  • High school/GED preferred
  • ten or more years experience in high volume preparation and cooking of food in a hotel, restaurant, cafeteria, catering firm, government or private institution, or internal candidate who demonstrates competency in at least four stations in the kitchen
  • proficiency in utilization of flat top grill, convection oven, deep fat fryer, quick cook ovens, and char broiler
  • proficiency in additional cooking equipment including slicer, standing mixer, combi oven, tilt skillet, soup kettles
  • proficiency in various cooking methods including pan frying, sautéing, deep frying, boiling, and baking/roasting
  • proficiency in additional cooking methods including grilling/broiling, roasting, simmering, steaming, braising, stewing, blanching, and poaching
  • competency in butchering/meat fabrication
  • proficiency in reading meal order tickets, adhere to dietary needs, and fill special requests
  • proficiency in reading recipes, calculating conversions, and forecasting volumes
  • strong customer service and communication skills
  • ability to act as charge to meet department needs

Job Duties

  • Assists in the preparation of hot food items for all areas as indicated by menu cycles
  • responsible for preliminary preparation of food items for next day as indicated by menu cycle
  • ability to read production tickets
  • assists with routine cleaning and sanitation of areas
  • assists with serving food items as indicated by established workflow
  • must demonstrate competency in knife skills
  • must demonstrate competency in food service safety practices and procedures, and temperature control
