The Cold Food Prep Supervisor role at Loews Sapphire Falls Resort plays a crucial part in maintaining high standards in food preparation and service. This position oversees the preparation, production, and quality control of all cold food items and supervises the Pantry/Prep personnel to ensure efficient workflow and adherence to standardized recipes. The role requires a hands-on approach to managing food rotation, inspection, and the correct storage of raw ingredients, with a keen focus on food safety and presentation. Additionally, the supervisor monitors plating standards to ensure that cold food items meet the resort’s established guidelines before service.

Safety and cleanliness are paramount in this role. The Cold Food Prep Supervisor is responsible for ensuring the proper use of kitchen equipment in a safe manner, addressing any equipment malfunctions or safety hazards promptly, and maintaining a clean and organized work area at all times. The role also includes closing responsibilities that ensure the kitchen is secure and all cooking equipment is turned off post-shift. Job Requirements

  • 5-7 years cooking experience in upscale, high-volume hotel or freestanding restaurant
  • culinary degree or equivalent formal training preferred
  • thorough knowledge and understanding of Food Service Sanitation Standards
  • strong organizational skills
  • excellent guest service skills
  • ability to effectively communicate in English verbally
  • ability to regularly push, pull, lift up to 50 lbs
  • must be able to work flexible schedule including nights, weekends, and holidays

Job Duties

  • Oversees preparation and production of all cold food items
  • supervises Pantry/Prep personnel
  • supervises setup and organization of work area with all necessary supplies and equipment
  • oversees, receives, inspects, and rotates all food products to ensure freshness and quality
  • supervises preparation and storage of raw food products prior to assembly
  • ensures standardized recipes are followed in preparation and assembly
  • assists Pantry/Preparation personnel with duties as needed
  • monitors plating of cold foods to ensure adherence to presentation guidelines
  • uses kitchen equipment safely and reports malfunctions
  • cleans and breaks down work area and returns ingredients to proper storage
  • completes closing side work, ensures equipment is turned off and kitchen is secure
  • promotes teamwork at all times
  • notifies appropriate individuals of concerns promptly
  • maintains cleanliness and equipment condition
  • complies with hotel safety, policy, and uniform standards
  • attends hotel meetings and training sessions
  • recycles whenever possible
  • remains current with hotel information and changes
  • executes emergency procedures as per hotel standards
