The role of Cook at Creative Dining Services at Concordia Theological Seminary offers a full-time employment opportunity within the Dining Services Department. This position involves preparing high-quality, properly seasoned, and nutritious food while maintaining fiscal responsibility and adhering to food safety standards. The cook is a vital member of the dining team, working collaboratively to ensure smooth operation and exceptional service. The Cook's typical work schedule is Tuesday through Thursday from 8 AM to 4 PM and Friday through Saturday from 10 AM to 7 PM.

As a Cook, the incumbent is expected to manage food production efficiently to have all dishes ready in time for service, while adhering strictly to recipes and menus to maintain consistency and appeal. Emphasis is placed on batch cooking techniques to manage production volumes accurately, avoiding waste. Following safe food handling procedures is essential to ensure customer safety and food quality. The Cook also must maintain proper storage, labeling, and handling of food products, including temperature control before, during, and after preparation.

Record keeping is another crucial aspect of this role, requiring diligent maintenance of production and operational logs covering food usage, inventory discrepancies, customer counts, and kitchen temperatures. Keeping the kitchen clean, sanitized, and organized supports safe and efficient operations. The Cook may also be responsible for opening or closing kitchen shifts, securing the premises, and ensuring that equipment is properly operated and maintained.

Effective communication with supervisors and other team members about operational needs, production concerns, and equipment status is expected to facilitate timely resolutions and smooth workflow. Collaboration with other kitchen employees to meet essential kitchen functions is also a vital part of the role. Additionally, cooperative participation in inventory management and waste removal contributes to the overall efficiency and effectiveness of the dining services.

Job Duties

  • Time food production such that all food is ready at the time of service
  • Prepare food items according to established recipes and menus in a manner in which preserves food freshness, quality and appeal
  • Utilize batch cooking techniques to avoid over or under production
  • Utilize safe food handling techniques at all times
  • Store food items according to established standards of practice
  • Utilize proper labeling and dating
  • Hold prepared food items at appropriate temperatures below 40 degrees if cold, above 135 degrees if hot
  • Maintain production records including food usage, overages, shortages, customer counts
  • Maintain established logs such as food temperatures, cooling temperatures, cooler and freezer temperatures
  • Maintain a clean and sanitized work area
  • Follow established work rules and regulations
  • Be ready for work in the kitchen, in uniform, at the scheduled time
  • Properly open and/or close the kitchen if required
  • Maintain a safe, tidy and well-organized work environment
  • Clean up spills quickly, wear protective gear as needed
  • Store wares safely
  • Communicate needs and concerns to supervisor appropriately and timely
  • Monitor kitchen equipment for proper functioning and report discrepancies immediately
  • Support other kitchen employees
  • Be proactive in communication
  • Monitor communication posting areas
  • Assist management in ordering and inventory procedures
  • Remove refuse as needed
  • Put away and pull stock as needed
