The Cook position at Jefferson Health Northeast plays a vital role within the Food Service Department under the supervision of the Lead Cook, Food Service Supervisor, Food Service Manager, Production Manager, or Executive Chef. This role focuses on preparing food that meets the highest standards for flavor, texture, appearance, temperature, nutritional value, and palatability, catering specifically to patients, staff, visitors, and catering guests. The cook handles a variety of food categories including entrees, soups, sauces, and vegetables, adhering strictly to standardized recipes to ensure consistency and quality. Key responsibilities include competent preparation techniques such as braising, sautéing, boiling, baking, grilling, and steaming, as well as proper food holding and service ensuring safety and hygiene according to HACCP (Hazard Analysis and Critical Control Points) guidelines and health regulatory standards.
The role emphasizes the importance of accurate recording of production and HACCP documentation to maintain food safety and cost control. Food is prepared, portioned, labeled, and dated correctly, including the management of leftovers to maximize resources without compromising safety or quality. The cook is also responsible for ensuring timely preparation so that meals are served fresh and at the correct temperatures, which is critical in both patient and non-patient dining areas. Maintaining cleanliness and sanitation in cooking and serving areas is required to uphold regulatory and internal standards. This full-time regular position requires a high school diploma or equivalent (preferred but not mandatory) and at least three years of experience in food preparation. Job Requirements
- High school graduate or equivalent preferred
- Minimum 3 years previous experience in food preparation required
- Excellent interpersonal and communication skills
- Ability to work day shift

Job Duties
- Interact with co-workers, visitors, and other staff consistent with the values of Jefferson
- Competently prepare select foods for patients, staff, and visitors that are of the highest quality, visually and taste
- Professionally braise, sauté, broil, boil, stew, steam, bake and grill to proper cooking time and temperature
- Prepare and portion entrees, soups, sauces and vegetables according to recipes and production orders
- Record usage on production records to ensure foods are prepared correctly and costs are maintained
- Assemble ingredients and prepare recipes
- Portion, label and date food for storage or transport
- Maintain proper handling, storage, cooling and delivery of food and supplies to ensure patient/customer safety using HACCP guidelines
- Maintain proper HACCP and production records
- Check on food during service in patient and non-patient areas to ensure no delays
- Plan cooking and prepping schedule so foods are ready at specified times
- Adhere to food quality standards of appearance, taste, temperature and sanitation
- Store leftovers appropriately and utilize same in subsequent menu to ensure they are served within timeframe
- Complete cleaning assignments to maintain sanitation standards in cooking and serving areas
- Participate in and attend all department in-services to maintain department operating standards
- Perform other duties as assigned
