Job Requirements

  • High school diploma or equivalent and/or experience in hotel or related field preferred
  • Culinary experience required
  • Flexible and long hours sometimes required
  • Medium work requiring exertion of up to 50 pounds occasionally and/or 20 pounds frequently to move objects
  • Ability to stand throughout entire shift
  • Ability to withstand temperature variations hot and cold
  • Thorough knowledge of menus and required preparation
  • Proficiency in cooking techniques including charbroiling, poaching, deep-frying, sauté, braising, roasting, and par-cooking
  • Knowledge of herbs and spices and their proper use

Job Duties

  • Maintain cleanliness and organization of all storage areas
  • Complete necessary food and station preparation prior to restaurant opening to ensure prompt and efficient guest service
  • Prepare and display buffet food items according to hotel standards
  • Recognize quality standards in fresh vegetables, fish, dairy, and meat products
  • Maintain clean and sanitary environment with proper food handling, storage, and sanitation
  • Prepare food for banquets following specifications on banquet event orders
  • Prepare and service food for the employee cafeteria as directed
  • Follow hotel standard recipes for all food preparation and prepare specials under direction
  • Breakdown buffets and kitchen line, storing food and equipment properly after meal periods
  • Work banquet food stations as scheduled
  • Know the location and operation of all fire extinguishing equipment
  • Practice safe work habits to prevent injury
  • Use production charts as specified
  • Support any kitchen position in need of assistance
  • Follow all health department and company regulations regarding food, storage, and safety
  • Operate and maintain cleanliness of all kitchen equipment
  • Maintain a clean-as-you-go policy
  • Assist in food storage and rotation according to procedures
  • Sign keys out and back in under supervision as needed
