The position we are offering is for an experienced Food Production Specialist who will play a vital role in our food preparation and production process. The successful candidate will be responsible for reviewing production sheets and recipes to guarantee the correct quantities and quality of items prepared daily. This role requires a skilled professional who can measure and mix ingredients accurately, utilizing various kitchen equipment such as blenders, mixers, grinders, slicers, and tenderizers to produce an array of food items including soups, salads, gravies, desserts, sauces, and casseroles. The Food Production Specialist will also be tasked with baking, roasting, broiling, and steaming meats, fish, vegetables, and other dishes in accordance with standard recipes, as well as carving and slicing meats and cheeses for service.

Attention to detail is critical in this role, as it involves garnishing, displaying, and serving food items that meet our established standards. Proper storage and inventory rotation are essential to maintain food quality and safety, with the specialist also monitoring food temperatures and adhering to strict sanitation protocols to prevent contamination. The role demands the maintenance of temperature logs and ensures portion control to reduce food waste and manage costs effectively. Job Requirements

  • High school graduate or equivalent knowledge
  • Minimum of 3 years experience in food production in a hotel, restaurant or high-end institutional setting
  • Ability to measure and scale ingredients accurately
  • Knowledge of diet restrictions and ability to adapt recipes
  • Proficient time management skills
  • Strong interpersonal skills
  • Obtain ServSafe Food Handler certification within one year of employment

Job Duties

  • Review production sheets and recipes to ensure quality and quantity needed for items to prepare
  • Prepare food on daily production report according to established guidelines
  • Maintain time and production records
  • Measure and mix ingredients according to recipe using a variety of kitchen utensils and equipment
  • Bake, roast, broil and steam meat, fish, vegetables and other foods per recipes
  • Carve and slice meats and cheese
  • Garnish, display and serve food items according to standards and recipes
  • Ensure proper storage and rotation of inventories in refrigerators and freezers
  • Monitor food temperatures and utilize established procedures to ensure safe food handling techniques and prevent bacteria contamination
  • Follow department standards for safe food handling, storage and sanitation
  • Maintain temperature logs for production areas per department standards
  • Monitor accurate portioning and promote food waste control
  • Prepare in small batches to help control waste and cost
  • Demonstrate knowledge and skills to provide care appropriate to the age of the patients served
  • Demonstrate knowledge of principles of growth and development over the life span and assess data to identify each patient’s requirements relative to age-specific needs
